We love a classic pot roast, and this shredded beef dinner brings all those comforting flavors and more! It’s loaded with flavor and packed with extra vegetables. We especially enjoy serving it over mashed potatoes.

Do you make a pot roast on Sunday nights? We often do, and then I also make a loaf of white bread in my bread maker (or buy store-bought dinner rolls😅). If you often make pot roast, you’ll also want to make my 3 packet pot roast, or coca-cola pot roast.
What you need:

- Chuck roast – a perfect cut for pot roast dinners!
- Vegetables -Fresh carrots, green beans, onion, canned diced tomatoes, and canned corn.
- Seasonings and more – Crock-pot Savory Pot Roast Seasoning (found near the gravy packets at the store) and Italian seasoning.
How to Make:



- Add the chuck roast to the crockpot, then sprinkle over the pot roast seasoning mix and Italian seasoning mix.
- Add the carrots, diced tomatoes, and onion. Pour over the water. Cook on LOW for 9 hours.
- When that cooking time is up, add the trimmed green beans and cook for an additional hour.


- Remove the roast on a large plate or sheet pan and shred with two forks.
- Before adding the shredded roast back to the slow cooker, take the time to degrease the sauce, I do this with a paper towel.

Variations
- This recipe can be made with a pork roast! Use a small pork shoulder or butt instead of the chuck roast.
- Other vegetables you can add are potatoes or mushrooms (these can be added at the beginning of the cooking time. You can add bell peppers or zucchini the last hour of cooking.
- Replace the water with a half cup of red wine; I like Merlot or a red blend.

My serving suggestions
- Hands down the best way to serve is over homemade mashed potatoes.
- Steamed white rice is a delicious and economical way to serve this shredded beef dinner.
- Another wonderful idea is to serve over-cooked wide egg noodles.
- Sides for all of the above are a green salad and any type of bread!

Slow Cooker Shredded Beef Dinner
Ingredients
- 4 lb. beef chuck roast
- 1.5 oz. Crockpot Brand Savory Pot Roast Seasoning
- 1 ½ tsp. Italian seasoning blend
- 3 carrots sliced
- 1 diced white onion,
- 15 oz. can Italian seasoned diced tomatoes
- 1/2 cup water
Wait to add:
- 1 lb. green beans, ends snipped and cut in half
- 15 oz. can corn
- salt to taste
FOR SERVING
- Mashed potatoes
Instructions
- (NOTE THE 10 hour total cooking time!)
- Add the chuck roast to the slow cooker. Sprinkle over the pot roast mix and then add the Italian seasoning mix, sliced carrots, diced onion, canned tomatoes. and water.
- Place the lid on the slow cooker and cook on LOW for 9 hours. Check to see if the roast is very tender and shreddable.
- Then add the green beans, and corn. Place the lid back on the slow cooker and cook for 1 hour longer on low. It will take this long for the green beans to soften.
- When the cooking time is up, you can remove the roast onto a plate to shred or shred right in the slow cooker. Remove any fatty pieces.
- Stir the shredded beef into the sauce and vegetables gently and serve with mashed potatoes.
