This Slow Cooker Italian Pot Roast is a rich, savory, and hearty dish packed with tender shredded beef, flavorful Italian-seasoned veggies, and the perfect sauce to spoon over creamy mashed potatoes!
Add the chuck roast to the slow cooker. Sprinkle over the pot roast mix and then add the Italian seasoning mix, sliced carrots, diced onion, canned tomatoes. and water.
Place the lid on the slow cooker and cook on LOW for 9 hours. Check to see if the roast is very tender and shreddable.
Then add the green beans, and corn. Place the lid back on the slow cooker and cook for 1 hour longer on low. It will take this long for the green beans to soften.
When the cooking time is up, you can remove the roast onto a plate to shred or shred right in the slow cooker. Remove any fatty pieces.
Stir the shredded beef into the sauce and vegetables gently and serve with mashed potatoes.
