This cheesy kielbasa casserole isn’t just a side dish—it’s the main star! The meal comes together easily with frozen cubed hashbrown potatoes and cream of mushroom soup. But don’t worry, the flavor is far from boring—my special touches, like sour cream and seasonings, make it taste like it’s made completely from scratch.

What you need:

  • Kielbasa: This may be labeled as polska kielbasa, smoked sausage or ring sausage. I think the polska sausage has the perfect flavor for this meal.
  • Hashbrown Potatoes: These are in the freezer section of the store, not to be confused with shredded hashbrown potatoes.
  • Onion: One white onion, diced.
  • Sauce Ingredients: For an easy sauce a mixture of cream of mushroom soup, sour cream, milk, salt, pepper, onion powder and garlic powder are combined.
  • Cheese: Shredded cheddar cheese, for best results, grate your own cheese (it will melt better).

  • Fresh russet potatoes can be substituted, but be sure to dice them into small 1/2-inch cubes for even cooking.
  • The kielbasa can be browned in a skillet if you prefer.

Step-by-Step Directions

  1. Spray the slow cooker with non-stick spray. Add the frozen hashbrown potatoes to the slow cooker, along with kielbasa, diced onion and half of the cheese.
  2. In a medium sized bowl mix together the cream of mushroom soup, milk, sour cream, salt, pepper, onion powder and garlic powder.
  3. Pour that creamy mixture over the items in the slow cooker and stir. Wipe down the sides of the slow cooker if desired for a cleaner look.
  4. Sprinkle over remaining cheese. Place the lid on the slow cooker and cook on LOW For 5 hours.

  • 12 oz. Kielbasa, (12-14-oz package works fine!) sliced about a 1/4 inch thick and in half rounds.
  • 1 small white onion diced

  • 10.5 oz. cream of mushroom soup (or chicken), (do not add water)
  • 1 cup sour cream

  • 1 tsp. onion powder

For Garnish:

  • sliced chives or green onions.
