Potato casseroles are always a winner, and they turn out great in the slow cooker! This one’s a bit different because it has diced tomatoes, gooey cheese, and creamy mushroom soup. Some how, all these flavors combine to make a seriously hearty meal.
It’s similar to a cowboy casserole but with its own twist. This recipe is perfect for feeding a crowd or just someone with a big appetite!
Recipe Ingredients
- Ground Beef – Lean ground beef, browned in a skillet.
- Russet Potatoes – Cubed and skins left on.
- Onion – One diced sweet yellow onion.
- Diced Tomatoes – Canned diced tomatoes, do not drain.
- Kidney Beans – This is a unique ingredient to add to a casserole and tastes great, but don’t skip them!
- Cream of Mushroom Soup – Add a slight creaminess to the meal.
- Seasonings – Salt, pepper, onion powder, garlic powder, and chili powder.

Variations
- Ground turkey or ground chicken can be used instead of ground beef.
- Other vegetables that can be added are carrots, green beans or mushrooms.
- Campbell’s tomato soup is great instead of the diced tomatoes (undiluted).
Step-by-Step Directions
- Start by browning the meat with the onion in a skillet. Add that to the slow cooker with the remaining ingredients (except the cheese). Stir.
- Cook on LOW for 5-6 hours. Stir.
- Sprinkle the cheese over the lumberjack casserole.
- Place the lid back on and let the cheese melt, this will only take a few minutes. Serve and enjoy!
How to Serve:
- Spoon the lumberjack casserole onto plates or bowls. This is a filling, complete meal.
- Add a green salad and dinner rolls for an even more hearty meal.
- This can also be served over white rice to stretch out the meal and serve more people.

Slow Cooker Lumberjack Casserole
Ingredients
- 1 lb. lean ground beef, I use 7% fat
- 2 small russet potatoes, cubed
- 1 sweet yellow onion, diced
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. chili powder
- 1 tsp. salt
- ¼ tsp. freshly ground pepper
- 15 oz. can petite diced tomatoes
- 15 oz. can kidney beans, drained
- 10.5 oz. can cream of mushroom soup
WAIT TO ADD:
- 8 oz. bag sharp cheddar cheese
Instructions
- Cook the ground beef and onions together in a skillet on the stove top. Brown and crumble, drain off any grease.
- Add remaining ingredients to the slow cooker (except the cheese).
- Cook on low for 5-6 hours.
- When the cooking time is up, stir, and sprinkle the casserole with cheese and serve.

Hi Chris, that does sound good. But you’ll want to cook them separate. The slow cooker doesn’t cook raw pasta well.
I have been preparing some of your recipes for about a year now. Some are good, some are OK and some disappointing. But recently tried AMISH 6-Layer Dinner: Absolutely Delicious. I added aioli sauce, fresh peas, mushrooms, beef stock and about 15 different spices…a cllutrly delicious andvwill make it again. One other note: someone wrote that potatoes dont freeze well. Yes, raw tators dont freeze well, but cooke ones no problems. I have been frezzing potato casseroles and other dishes for several years, and they thaw out Perfect Thank you
