With a bag of Hurst’s Italian Bean Soup Mix and a few other ingredients, you can have the best Italian soup ever! There is a seasoning packet included with the beans and has the perfect amount of seasonings.

  • Red Kidney
  • Borlotti (Roman)

How to make Italian Chicken Bean Soup?

You will need:

  • Hurst’s HamBeens Italian Bean Soup Mix (save the included seasoning packet for the end of cooking time)
  • 1 1/2 pounds boneless skinless chicken breasts
  • 3 celery ribs, sliced
  • 2 carrots, sliced
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 sprig rosemary (or 1/2 tsp dried rosemary)
  • 8 cups chicken broth
  • 30 oz. Italian diced tomatoes (two 15-oz. cans) WAIT TO ADD UNTIL THE END

  • Add the beans to a colander and rinse, sort out any unwanted debris and discard. Add the beans to the slow cooker.
  • Add the chicken, celery, carrots, onion, garlic, rosemary and chicken broth. (WAIT TO ADD THE TOMATOES AND ITALIAN SEASONING PACKET)

How long to do I cook?

  • Place the lid on the slow cooker. Cook on HIGH for 7 hours without opening the lid during the cooking time. There are a lot of large beans in this and the longer cooking time is needed to soften them.

  • Remove the rosemary spring from the top (if you used a sprig).
  • Remove the chicken breasts onto a plate and cut into cubes (or shred) and add back into the soup.
  • Add the two cans of diced tomatoes and the included Italian seasoning packet.
  • Stir. Add salt to taste.
  • Serve and enjoy!

Can I use leftover turkey in this recipe?

Yes! Use 3-4 cups cubed cooked turkey meat (dark meat works great) in this recipe, add at the beginning of the cooking time.

Can I freeze the extra soup?

  • Yes, let cool off and place in plastic or glass containers with an inch of room at the top. Place the lids on.
  • Freeze for up to 3 months.
  • Thaw out in the fridge for 24 hours before needed.

    Thank you for these recipes Sarah! We love bean dishes! I do have a question…if we use can beans, does it still needs to cook on high that long?
    I understand the time for dried beans.
    I just don’t want them mushy.

      I would do 4-5 hours on high, my carrots usually take that long to soften.

    Do you know the proportion of each bean? I’m not fond of using the seasoning packet, as there are too many non-food items that do not belong in my body. I may just mix the requisite amount of each bean and call it good. Thanks.

    Please, please create some recipes that don’t use meat or poultry. (or suggest substitutions). My body can no longer tolerate either. Any recipes that use fish, seafood, legumes/beans, & veggies would be great. I miss using my slow cooker. Thanks.
