One main ingredient – dry onion soup mix – turns traditional meatloaf with a simple recipe into mouth-watering Slow Cooker Lipton Onion Meatloaf. Take the guesswork out of what you’re cooking for dinner and have a go at whipping up something the whole family will enjoy.

Onion Soup mix adds so much flavor to recipes. With my Lipton Onion Meatloaf recipe (which also freezes well), you get an incredibly flavorful loaf that will make you question why you’ve ever made it without.

Key Ingredients

Ground Beef: You’ll want to use at least 2 pounds of beef for this recipe. I like to use 12% from Costco.

Bread Crumbs: Holds the meatloaf together.

Eggs: Another ingredient that helps with the molding and creating a moist meatloaf.

Milk: Milk not only soaks the breadcrumbs but also adds moisture to the meatloaf.

Lipton Onion Soup Mix: This is the hidden flavor gem of the dish. This mixture is a combination of dry onion flakes, beef bullion granules, onion powder, parsley, celery seed, paprika, and black pepper. Lipton can be used in a variety of dishes to enhance flavor, just like in my Slow Cooker Lipton Onion Potatoes and Slow Cooker Cube Steak.

Ketchup: What’s a good meatloaf without ketchup? Not only is this included in every classic recipe, but it also helps with creating a flavorful meatloaf.

How to Make Lipton Onion Meatloaf

  1. Mix everything together until just combined.
  2. Shape into a loaf and place in the crockpot.
  3. Cook low and slow, then remove excess grease and slice.

Tips & Variations

Meat Swap: You can use ground chicken or turkey, but you may need to add more breadcrumbs.

Add Vegetables: You can add fresh veggies such as onions, green bell pepper or diced mushrooms.

How to Serve Onion Meatloaf

Main Sides: Meatloaf has long been served with comforting sides such as green beans, mashed potatoes, baked potatoes, coleslaw, macaroni and cheese, and/or turnip greens.

Leftovers: Make meatloaf sandwiches with the leftovers. I like to heat the meatloaf slices in a skillet before assembling the sandwiches.

Add a Glaze: After the cooking time is up, you can add a glaze. Our favorite is a glaze made of ketchup, brown sugar, and a touch of mustard

Why is there grease around the meatloaf?

That’s normal. Just ladle it out before slicing for a better texture.

Ingredients 
 

  • 2 eggs
  • ½ cup milk
  • ½ cup ketchup
  • ¾ cup dry breadcrumbs
  • 1 oz. packet Lipton onion soup mix
  • 2 lbs. ground beef, I used 12% fat from Costco

Instructions 

  • In a medium-sized bowl mix together the eggs, milk, ketchup, breadcrumbs and dry soup mix packet with a spoon. Using clean hands add the beef and combine the wet egg mixture with the beef until just combined, don’t over mix it.
  • Shape into a loaf in an oval slow cooker.
  • Cover and cook on LOW for 5 hours.
  • Take a spoon and ladle out and discard the fat that is surrounding the meat loaf. Cut the meatloaf into slices being careful not to scratch the slow cooker with the knife.
  • Enjoy!

Freezer Meal Instructions:

  • Write the date and cooking instructions on a zip lock bag. Mix loaf as directed above. Place the meat loaf mixture into a zip lock bag that has been set into a reusable foil pan. The pan is just to keep the meat in to a loaf shape while freezing. Squeeze all the air out of the bag. Place the meat loaf in the freezer (leave it in the tin). Freeze for up to a month.

To cook after being frozen:

  • Place the frozen meat loaf (still in the tin) in the refrigerator to thaw. About 36 hours is the perfect amount of time to thaw. Flip the meat loaf into the slow cooker, if you are careful it should stay in the correct shape. Cook as directed above.

    I have used this same meatloaf recipe for many years though have never tried to do it in the slow cooker … I will try that! Over the years, I’ve made a couple of substitutions which I like even better: I use BBQ sauce instead of ketchup, and oatmeal to replace the bread crumbs. I also use this exact same mixture when making hamburgers for the barbie. Yum!

    Please read the nutrition list on the Lipton soup packet. There is way too much sodium in the mix, and it contains MSG, which can cause migraine headaches and adverse reactions in some people. While your recipe may mitigate some of the sodium content, it does not mitigate the MSG. You can suggest a lower sodium product from Lipton, but you cannot lose the MSG (which is usually only a preservative.)
    May I suggest an attempt at making a Lipton Soup Mix alternative recipe that contains no MSG, and much less sodium to use in this and other recipes. Please warn of the MSG in the recipe. Thank you, you are amazing.

    I made this meatloaf for the first time and it came out great! I used ground pork along with ground round.
    I think the trick on the bread crumbs i used panko came out outstanding.. Thank you so much! I enjoy your receipes. The meatloaf of yours i usually make is the one with the ketchup topping with brown sugar but I think I will switch up and start making this receipe.

    Excellent meat loaf! I found this recipe a month ago and have already made it a couple times. I’m not a huge fan of ketchup so I only added 1/4 cup. I used my Instant Pot trivet in the crockpot to keep the meatloaf out of the grease at the bottom and it worked perfect.

    Can I cook this on high in crock pot for 3 or more hrs?

      Hi Mona! I don’t know if that would be enough time for the center to heat up. I have not tried. The slow cooker heats up very slow.
