Slow Cooker Minnesota Pork Chops are tender chops in a creamy brown and wild rice!
I saw this recipe for Minnesota Pork Chops on a friend’s blog Norine’s Nest. I knew the minute I saw this recipe I had to try it in the slow cooker. I am guessing this recipe is named Minnesota pork chops because wild rice is grown in Minnesota.
Though after I had made the recipe I looked at my box of wild rice and saw that it is from California, though I decided to not call this California pork chops, where ever you get your wild rice from this meal will be good.
I didn’t change much from Norine’s recipe except I did use Minute® rice and wild rice instead of a rice blend. Minute rice always does well for me as does wild rice in the slow cooker. Did you know that wild rice isn’t actually rice it’s really a grain, no wonder there is such a texture difference?

I really enjoyed the flavor of the mushrooms with the wild rice. The pork chops were very tender as well.

Slow Cooker Minnesota Pork Chops
Ingredients
- 1 1/2 lbs pork chops
- 2 Tbsp. cooking oil
- 21 oz. cream of mushroom soup, (two 10.5-oz. cans)
- 1 1/2 cups chicken broth
- 1 1/2 cups sliced mushrooms
- 1/2 cup minced onion
- 1/4 tsp. pepper
- 1/2 tsp. dried thyme
- 1 tsp. minced garlic
- 1 1/2 cups Minute® brown rice
- 1/2 cup wild rice
Instructions
- In a medium sized bowl mix together the cream of mushroom soup, chicken broth, mushrooms, onion, pepper, thyme, garlic, Minute® brown rice and wild rice.
- Place a skillet on the stove top over medium high heat. When the skillet is hot add the cooking oil, when the oil is hot brown the pork chops on both sides, don’t worry about cooking through, just brown them.
- Spray the slow cooker with non-stick spray, add the rice mixture. Then lay over the browned pork chops. Cover and cook on HIGH for 3.5 hours.
- Serve and Enjoy!

Will regular brown rice and wild rice work instead of minute rice
No, regular brown rice will get mushy and chalky.
Sarah, it would be a good idea to state about how thick the porkchops were, thanks….they didn’t look very thin so assuming they are about 1/2″…
Yes, about a 1/2 in. Any size chops will cook up great with this recipe.
I’ll let you know about the white minute rice, I’m making it now! Wow! Wild rice is pricy! Not much in the box either! Next time I might just get the rice a Roni wild rice mix & put a couple of boxes of that in (without the seasoning sauce packets in the box).

It had good flavor, but pork chops were tender but dry. The hite minute rice worked fine, but we didn’t mch care for the wild rice? Overall, I think we’ll stick t the gen version. But it was good for something different? Thank you!

Oh this looks absolutely delicious but I have a question about the pork chops. I typically buy the thick cut chops and Iโm wondering if they would work OK in this recipe. Would I have to cook them significantly longer?
This is so yummy I have cooked it twice.
I made this meal last night and it was a big big success. I’ve never had good luck with boneless pork. It’s always set so I used bone in chops and increased the cooking time 20 minutes. Cream soups have a little to much sodium so I always use a chicken or beef broth that I have thickened. Last night I softened the onions and some celery then added the mushrooms and garlic to the pan and cooked for a few minutes. Then I added a bit of butter and flour and chicken stock and it thickened up nicely. Even with these extra steps prep time was less than 10 minutes! The chops were fall apart juicy and tender and the rice so flavorful. Thanks for this recipie! It goes into our menu ritation.
Could basmati rice be used instead of the minute rice?
Regular rice doesn’t work well in the slow cooker. Turns out chalky.
You can use white rice. You put it in when it’s almost done.
I know this was posted awhile ago, I now have a 9×13 casserole crock pot. Do you think this recipe would work in it ???
