Slow Cooker Minnesota Pork Chops are tender chops in a creamy brown and wild rice!
I saw this recipe for Minnesota Pork Chops on a friend’s blog Norine’s Nest. I knew the minute I saw this recipe I had to try it in the slow cooker. I am guessing this recipe is named Minnesota pork chops because wild rice is grown in Minnesota.
Though after I had made the recipe I looked at my box of wild rice and saw that it is from California, though I decided to not call this California pork chops, where ever you get your wild rice from this meal will be good.
I didn’t change much from Norine’s recipe except I did use Minute® rice and wild rice instead of a rice blend. Minute rice always does well for me as does wild rice in the slow cooker. Did you know that wild rice isn’t actually rice it’s really a grain, no wonder there is such a texture difference?

Slow Cooker Minnesota Pork Chops
Equipment Needed:
Ingredients:
- 1 1/2 lbs pork chops
- 2 Tbsp. cooking oil
- 21 oz. cream of mushroom soup (two 10.5-oz. cans)
- 1 1/2 cups chicken broth
- 1 1/2 cups sliced mushrooms
- 1/2 cup minced onion
- 1/4 tsp. pepper
- 1/2 tsp. dried thyme
- 1 tsp. minced garlic
- 1 1/2 cups Minute® brown rice
- 1/2 cup wild rice
Instructions:
- In a medium sized bowl mix together the cream of mushroom soup, chicken broth, mushrooms, onion, pepper, thyme, garlic, Minute® brown rice and wild rice.
- Place a skillet on the stove top over medium high heat. When the skillet is hot add the cooking oil, when the oil is hot brown the pork chops on both sides, don’t worry about cooking through, just brown them.
- Spray the slow cooker with non-stick spray, add the rice mixture. Then lay over the browned pork chops. Cover and cook on HIGH for 3.5 hours.
- Serve and Enjoy!

I made this meal last night and it was a big big success. I’ve never had good luck with boneless pork. It’s always set so I used bone in chops and increased the cooking time 20 minutes. Cream soups have a little to much sodium so I always use a chicken or beef broth that I have thickened. Last night I softened the onions and some celery then added the mushrooms and garlic to the pan and cooked for a few minutes. Then I added a bit of butter and flour and chicken stock and it thickened up nicely. Even with these extra steps prep time was less than 10 minutes! The chops were fall apart juicy and tender and the rice so flavorful. Thanks for this recipie! It goes into our menu ritation.
Could basmati rice be used instead of the minute rice?
Regular rice doesn’t work well in the slow cooker. Turns out chalky.
You can use white rice. You put it in when it’s almost done.
I know this was posted awhile ago, I now have a 9×13 casserole crock pot. Do you think this recipe would work in it ???

Hi Sarah, this is the first cooking site that I have come across that is dedicated to Slow Cooking. Yeah!!!! I love that you came up with the idea for this site. I am disabled and my husband has several heart problems, but gets around much better than I do. I have a motorized wheelchair, which really helps me get around some. I use to be in the kitchen cooking and baking, but now, I don’t do much. Just found the Crock Pot Liners, boy what a blessing they are! I can’t lift the crock out of the base and my husband shouldn’t be lifting it either. I have made 3 meals in the crock pot since the first of the month, which is amazing!!!

If it was minute rice. I have not had luck with regular rice in the crock pot.
