I love it when I find a complete meal for the slow cooker — no worrying about making side dishes for this meal since everything is prepared at once.

For this meal, I use bone-in chicken thighs. I think if boneless skinless chicken is used in the recipe, the recipe will be dry.

The juices from the bone-in, skin-on chicken thighs help make a flavorful sauce along with the tomato sauce and seasonings. If you chose to use chicken breasts, add a cup of chicken broth.

Browned Chicken Thighs, Yukon gold potatoes and a tomato based sauce are slow cooked to perfection.

Ingredients

  • 2 1/2 lbs bone-in chicken thighs
  • 2 Tbsp. cooking oil
  • 1 1/2 lbs. Yukon gold potatoes, diced
  • 1 lb. green beans, ends snipped
  • 2 garlic cloves, minced
  • 8 oz. can tomato sauce , (not paste)
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried rosemary

Instructions

  • Set a pan on the stove top and set to medium-high heat. Add the cooking oil and swirl coat the bottom of the pan. When the oil is hot, brown the chicken on both sides, you don't need to cook the meat through.
  • Add the diced potatoes and green beans to the bottom of the slow cooker, toss them together to combine them.
  • Add the chicken thighs on top of the potatoes and green beans. Add the garlic. Drizzle over the tomato sauce, then sprinkle over the salt, pepper, thyme, and rosemary. Take a spatula and smear around the sauce trying to combine the seasoning into the sauce.
  • Cover and cook on HIGH for 4.5 hours. Do no open the lid during the cooking time or the potatoes will not get tender.
  • Serve and enjoy!

My family really enjoyed this recipe. So easy & very savory! We removed the skin before eating the chicken but it really kept the chicken so moist. A keeper

    1. Sarah Olson says:

Yes, we usually take the skin off too! Chicken thighs do great in the slow cooker.

If we don’t like tomato sauce, what would be a good alternative?

    1. Lisa says:

      I would try Chile sauce…

This is going to be a keeper for sure! My husband really liked it. I had to alter the recipe a little though. I didnโ€™t have any tomato sauce. So I used diced tomatoes. And I also used boneless skinless chicken. It turned out perfect, if you ask my husband. He loved the diced tomatoes with the green beans and potatoes.

  5. Kathy Cato says:

Chicken and veggies are yummy! I did miss the part of adding the chicken broth if using boneless skinless chicken. Could you add that tip after the directions. Still good and I will know next time…Thank you.

  6. Maria says:

Could I just put the chicken in raw instead?

    1. Teresa says:

You could but if you season the chicken a s seal it in by browning it. That adds to the flavor

      1. Maria says:

I doubled the recipe… how much more time do you think I need to cook it for? Thanks

  7. Lily rathamcher says:

How long would you cook it on low setting

    1. Sarah Olson says:

I would do 7-8 on low

  8. Maria says:

How would I use the slow cooker setting for my instant pot?

    1. Sarah Olson says:

I have not tried but I heard it cooks on the lower side and you may want to use the higher setting on the slow cooker setting.

  9. Cassandra Willis-Beck says:

Thank you for this recipe, it was not hard to make, matter of fact it was relatively easy and OMG so so delicious, for this I’m giving it not 2 up but !โคโค

  10. Jason says:

What sauce goes well with this recipe??

    1. Sarah Olson says:

There will be some juices at the bottom of the slow cooker you can use. The chicken is pretty juicy you probably don’t need to add any other sauces.
