Potato type: Though we love yukon gold potatoes, you can use any potato in this recipe. Just be sure to cut them into small cubes.

Ingredients
- 2 ½ lbs bone-in chicken thighs
- 2 Tbsp. cooking oil
- 1 ½ lbs. Yukon gold potatoes, diced
- 1 lb. green beans, ends snipped
- 2 garlic cloves, minced
- 8 oz. can tomato sauce , (not paste)
- 1 ½ tsp. salt
- ¼ tsp. pepper
- ½ tsp. dried thyme
- ½ tsp. dried rosemary
Instructions
- Set a pan on the stove top and set to medium-high heat. Add the cooking oil and swirl to coat the bottom of the pan. When the oil is hot, brown the chicken on both sides, you don't need to cook the meat through.
- Add the diced potatoes and green beans to the bottom of the slow cooker, toss them together to combine them.
- Add the chicken thighs on top of the potatoes and green beans. Add the garlic. Drizzle over the tomato sauce, then sprinkle over the salt, pepper, thyme, and rosemary. Take a spatula and smear around the sauce trying to combine the seasoning into the sauce.
- Cover and cook on HIGH for 4.5 hours. Do no open the lid during the cooking time or the potatoes will not get tender.
- Serve and enjoy!

This is going to be a keeper for sure! My husband really liked it. I had to alter the recipe a little though. I didn’t have any tomato sauce. So I used diced tomatoes. And I also used boneless skinless chicken. It turned out perfect, if you ask my husband. He loved the diced tomatoes with the green beans and potatoes.
Chicken and veggies are yummy! I did miss the part of adding the chicken broth if using boneless skinless chicken. Could you add that tip after the directions. Still good and I will know next time…Thank you.
Could I just put the chicken in raw instead?
You could but if you season the chicken a s seal it in by browning it. That adds to the flavor

I would do 7-8 on low
How would I use the slow cooker setting for my instant pot?
I have not tried but I heard it cooks on the lower side and you may want to use the higher setting on the slow cooker setting.

What sauce goes well with this recipe??
There will be some juices at the bottom of the slow cooker you can use. The chicken is pretty juicy you probably don’t need to add any other sauces.
