Why You’ll Love this Pork Chops and Potatoes in Crock Pot Meal

Slow cooker meals that take the guesswork out of putting something delicious on the dinner table is a must-try. And what could be better than pork and barbecue sauce?

I wanted to make a pork recipe in the slow cooker that wasn’t the usual pulled pork. To my slow cooker, I added pork chops, sliced potatoes, and onions and covered that in barbecue sauce, THEN topped that with bacon and cheese!

I used an entire bottle of my favorite barbecue sauce Sweet Baby Ray’s. There are so many flavors to choose from, don’t feel like you have to use the original flavor in this recipe, see the other flavors Sweet Baby Ray’s has to offer. I’m going to try the Sweet Golden Mustard next time! If you are looking for a recipe with homemade barbecue sauce, try my Slow Cooker BBQ Pork Chops recipe.

Recipe Ingredients

  • Russet Potatoes: Thinly sliced for that perfect balance of tender and hearty. They soak up all the flavors in the slow cooker.
  • White Onion: As they cook low and slow, they transform into golden, caramelized bites.
  • Pork Chops: Whether you prefer bone in pork chops for extra juiciness or boneless chops for easy eating, they soak up all the flavors, becoming fall-apart tender meat with every bite.
  • Barbecue Sauce: Sweet, smoky, and a hint of tang – Sweet Baby Ray’s is divided for strategic saucing, ensuring every bite has the perfect blend of BBQ taste.
  • Seasonings: Salt enhances natural flavors while black pepper adds subtle heat.
  • Bacon: Cooked bacon is added at the end and helps create a smoky crunch with every bite. You can also switch up the flavor of the bacon to your liking.
  • Cheese: Colby Jack cheese is my go-to choice of cheese flavor. It’s the finishing touch that makes this easy recipe definitely a keeper.

Recipe FAQs

Can I use other types of potatoes for this recipe?

Absolutely! While russet potatoes are traditional, you can experiment with Yukon Gold or red potatoes for different textures. Just keep in mind that cooking times may vary slightly.

Can I substitute the Sweet Baby Ray’s Barbecue Sauce with another BBQ sauce?

Of course! Feel free to use your favorite barbecue sauce or explore different flavors to suit your taste. The key is to choose a sauce that complements the pork chops and adds the desired level of sweetness and smokiness. You can also add other seasonings such as ranch seasoning, garlic powder, Italian herb seasoning, and onion powder.

What’s the best way to store leftover pork chops?

Store your leftovers in airtight containers in the refrigerator to keep them fresh. Make sure to separate the pork chops and potatoes to maintain their individual textures. Reheat in the microwave or on the stovetop with a splash of water to retain moisture.

Are there any alternatives for Colby Jack cheese?

Certainly! If you’re not a fan of this kind of cheese, try cheddar, mozzarella, or even pepper jack for an extra kick. The cheese adds a melty finish, so choose one that melts well and complements the overall flavor profile.

I don’t use Sweet Baby Ray’s BBQ sauce any more due to its predominant ingredient: High Fructose Corn Syrup. There are health concerns with HFCS. I use other brands of BBQ sauce.

Made this for the first time and it turned out amazing. I used super thick cut boneless center cut pork chops and 8 hours on low was perfect.

  5. Regina says:

Haven’t tried this yet, but planning on fixing it tomorrow for my picky, “tired of everything” elderly in-laws. I was wondering if anyone had tried this with chicken, either bone-in or boneless chicken thighs?

will this work if the chops are not all the way thawed?

No, the pork will let out it’s own liquid for this dish.

do we have to add cheese if we don’t have to

  9. Lauren says:

I wanted to try this with sweet potatoes instead of russet. Would it be the same in the crock pot?

Also, if I decided to bake the sweet potatoes instead, can I just put the pork chops in by themselves?

Is there an oven baked option?

    1. Sarah Olson says:

Hi Lauren, you can probably cook sweet potatoes instead of russet. I think it would be fine with out potatoes. I have no idea on oven times.

  10. Tiffany says:

Iโ€™m about to try it with the family, it smells delicious! Thanks (:
