Slow Cooker BBQ Pork Chops and Potatoes

Boneless pork chops, Russet potatoes, and sliced onions cook together in Sweet Baby Ray’s barbecue sauce then smothered in cooked bacon and melted Colby Jack cheese. Delicious recipes like this deserve a spot on the meal plan and it’s sure to become a family favorite.

Slow cooker meals that take the guesswork out of putting something delicious on the dinner table is a must-try. And what could be better than pork and barbecue sauce?
I wanted to make a pork recipe in the slow cooker that wasn’t the usual pulled pork. To my slow cooker, I added pork chops, sliced potatoes, and onions and covered that in barbecue sauce, THEN topped that with bacon and cheese!

- Barbecue Sauce: Sweet, smoky, and a hint of tang – Sweet Baby Ray’s is divided for strategic saucing, ensuring every bite has the perfect blend of BBQ taste.
- Seasonings: Salt enhances natural flavors while black pepper adds subtle heat.
- Bacon: Cooked bacon is added at the end and helps create a smoky crunch with every bite. You can also switch up the flavor of the bacon to your liking.
- Cheese: Colby Jack cheese is my go-to choice of cheese flavor. It’s the finishing touch that makes this easy recipe definitely a keeper.
Variations
This recipe is perfect as is, here are some small changes you are welcome to make:
- While russet potatoes are traditional, you can experiment with Yukon Gold or red potatoes for different textures. Just keep in mind that cooking times may vary slightly.
- Feel free to use your favorite barbecue sauce or explore different flavors to suit your taste.
- Other cheese options are mozzarella or pepper-jack, use what you have on hand.
How to Make Pork Chops and Potatoes
Step One – Place the potatoes down in an even layer into the slow cooker sprayed with non stick cooking spray (olive oil works as well). Sprinkle over the onions, and salt and pepper.

Step Two – Squeeze about a cup of the barbecue sauce over the potatoes and onions.

Step Three – Place pork chops next in an even layer.
Step Four – Add the remainder of the barbecue sauce over the pork chops.
Step Five – Cover and cook on HIGH for 4 hours, without opening the lid during the cooking time.
Step Six – After the cooking time is through, add the bacon slices over the pork chops.
Step Seven – Then add the cheese slices.
Step Eight – Cover for an additional 10 minutes to allow the cheese to melt. Serve and enjoy!

- This dish is a complete meal right out of the crockpot—no extra work needed!
- If you’d like to round it out even more, a fresh green salad or tangy coleslaw makes a great side. You can also serve it with a slice of warm cornbread for the perfect finishing touch.

Slow Cooker Pork Chops and Potatoes
Ingredients
- 5 cups sliced russet potatoes
- 1 cup sliced white onion
- ½ tsp. salt
- ¼ tsp. pepper
- 18 oz. Sweet Baby Ray's Barbecue Sauce , divided
- 2 lbs. pork chops, bone-in or thick cut bone-less
- 6 slices cooked bacon, add at the end
- 6 slices Colby-Jack cheese, add at the end
Instructions
- Spray a 6-quart oval slow cooker with non-stick spray. Place the potatoes down in an even layer. Sprinkle over the onions, and salt and pepper. Squeeze about a cup of the barbecue sauce over the potatoes and onions. Lay the pork chops next in an even layer. Add the remainder of the barbecue sauce over the pork chops.
- Cover and cook on HIGH for 4 hours, without opening the lid during the cooking time.
- After the cooking time is through, add the bacon slices over the pork, then add the cheese slices. Cover for an additional 10 minutes to allow the cheese to melt.

I made this recipe today and added a little baby rays sweet chili add a little something
And I added carrots no cheese no bacon
