If you love sizzling fajitas while dining out, then you must try these Easy Slow Cooker Chicken Fajitas, they are just what you are craving.

Recipe Highlights
- The slow cooker method comes out similar to sheet pan fajitas – a true one pan meal.
- Chicken and vegetables cook together and the flavors marry
- Cooks 6-8 hours – perfect for workday dinners
- Economical way to feed the entire family!
Key Ingredients
Chicken – Chicken tenderloins are ideal for fajitas since they’re the perfect size and cook evenly.
Vegetables – Classic fajita veggies: sliced bell peppers and either white or yellow onion.
Seasonings – A simple mix of salt, pepper, chili powder, and minced garlic brings just the right amount of kick.
Cooking Oil – A little canola or vegetable oil adds richness and helps keep the chicken tender and flavorful.
Cilantro & Lime – The ultimate fajita combo! A squeeze of lime and a sprinkle of fresh cilantro take the flavor to the next level—this duo is the real secret to restaurant-style fajitas at home.
How to make Slow Cooker Chicken Fajitas
- Add sliced chicken, peppers, onions, and seasonings to the slow cooker.
- Give it a quick stir to coat everything evenly (or you can keep layered).
- Let it cook low and slow until tender and juicy.
- Open the lid to steamy, fajita-ready deliciousness.
Sarah’s Tips & Variations
Thaw your meat before adding to the slow cooker.
Add 1-2 minced jalapenos along with the other seasonings if you want a spicy fajita.
Add the peppers during the last hour of cooking if you like them firmer. I recommend adding the onions initially; they take much longer to soften. Also, cutting your peppers thicker will help them from getting too soft.
How to serve Fajitas
- Tortillas – Serve with corn or flour tortillas. The best way to heat them is to wrap them in foil then put them in a 350-degree oven for about 10 minutes. OR warm each one in a dry skillet set to medium heat.
- Top with sour cream, cheese, or guacamole—and don’t forget a side of rice or refried beans!
- This recipe is great for low-carb or keto diets—just serve it in a bowl or with low-carb tortillas and a little sour cream on top.

Great recipe, but I did add some taco seasoning on top as well. Did you guys shred your chicken?
You can shred if you would like, but it will fall apart pretty easy when you go to serve.

Bland. Will not make this again.
The chicken goes in the bottom or the peppers/onions?
The onions go down first. Then chicken.
