This Slow Cooker Texas Trash Beef and Bean Dip is a must-try. I don’t know why it is called Texas Trash, but I guess that it is because it is filled with all the heavenly foods that we shouldn’t eat every day! Most recipes for this warm dip don’t have beef. I think beef is a natural addition and makes this dip more into a meal. The dip is often called garbage dip or white trash dip.
I’ve made so many Mexican bean dips over the years, and this one is very different. The cream cheese adds so much flavor and creaminess, and the flavor of the cream cheese helps the canned beans taste homemade.
Recipe Ingredients
- Refried Beans – One can of refried pinto or refried black beans. You can also use leftover homemade refried beans.
- Ground beef – Browned ground beef is added to this recipe to make it more of a hearty meal. Often there is no meat in Texas Trash Dip.
- Taco Seasoning – One packet of taco seasoning will perfectly season the beef and beans. Be sure to use mild if you are hosting a party.
- Fire-Roasted Chiles – These add flavor without adding heat.
- Cream Cheese – Makes the dip decadent and creamy. Make sure your cream cheese is at room temperature, or you can microwave it for 30 seconds.
- Sour Cream – This helps thin out the dip.
- Cheddar Cheese – Colby-jack cheese is an excellent choice for this decadent Mexican dip.
- Chips for serving – Use sturdy tortilla chips for this dip; it’s on the thicker side.
Step-by-Step Directions
Step One – Add the ground beef to a hot pan; add a touch of oil if your pan is not nonstick.
Step Two – Cook and crumble the beef. Drain off fat.
Step Three – Add the cooked ground beef to the crockpot.
Step Four – Next, add the beans, cream cheese, taco seasoning, sour cream, green chiles, and 2/3 of the cheese to the slow cooker. Mix well with a spoon or spatula. Spread the beans out in an even layer.
Step Five – Sprinkle on the remaining cheese.
Step Six – Cook on HIGH for 2 hours without opening the lid during the cooking time.
How to serve
- Top the entire dip with sour cream, olives, and jalapenos. Serve with a large bag of tortillas chips.
- Or leave out additional toppings on the side for your guests to choose from, such as sour cream, olives, jalapenos, cilantro, tomatoes, or even avocado.
Variations
- Pepper Jack – Use pepper Jack cheese in this dip instead of the Colby Jack cheese for a unique flavor.
- Velveeta – Use one pound of Velveeta cheese instead of any shredded cheese. You will have to stir this dip a few times to get the Velveeta to melt through the dip.

Ingredients
- 1 lb. ground beef
- 16 oz. can refried beans, (refried pinto or refried black beans)
- 8 oz. pkg. Colby Jack cheese, shredded and divided
- 7 oz. can fire-roasted green chiles, drained
- 8 oz. pkg. cream cheese, room temperature, (or microwave for 30 seconds to soften)
- 1 cup sour cream, plus more for serving
- 1 oz. pkg. taco seasoning
- Chips for serving
- Optional: Serve with extra sour cream, olives and salsa
Instructions
- Brown meat on the stove-top in a medium sized skillet, or in the slow cooker if your slow cooker has a browning option. Drain the grease. Add meat to slow cooker if using a skillet.
- Add the refried beans, 2/3 of the cheese, chiles, cream cheese, sour cream and taco seasoning. Stir everything together and flatten out with a spatula. Wipe down edges of slow cooker for a neat appearance.
- Sprinkle over remaining cheese.
- Cover and cook on HIGH for 2 hours without opening the lid during the cooking time.
- Serve with chips and additional sour cream, olives and salsa if desired.
