We love a good Velveeta dip like this recipe or my cheeseburger dip too!
What is Rotel?
- Rotel is canned tomatoes with diced green chiles.
- There are different varieties of Rotel such as Original, Hot, Mild, No Salt added and Fire-Roasted. Use whatever variety you like, my store only had the no salt variety due to low stock on items.
How to make Rotel Dip:
- 2 cans of Rotel – Yes! two cans, if you only use one you will have a dip that is too thick.
- Velveeta cheese – A small 1 lb. box.
- Seasonings – I use chili powder, garlic powder, salt, and pepper.
- Ground beef – cooked, crumbled, and drained before adding to the slow cooker.
How long do I cook?
- Place the lid on the slow cooker.
- Cook on HIGH for 2 hours, stirring occasionally.
Can I use sausage instead of ground beef?
- Ground sausage is great in this recipe!
- I like to use 1 pound of Jimmy Dean Breakfast sausage.
How can I make this less spicy?
- Rotel tends to be spicy, be sure to use “Mild” if you have any aversion to spicy food.
- Alternatively, you can use mild salsa instead of Rotel.
How can I thin my dip after it’s been on the warm setting for too long?
- The dip will thicken with time if left on the warm setting for a length of time while serving.
- Add a splash of milk to thin the dip.

Equipment Needed:
- Slow Cooker – 4 quart or larger
Ingredients:
- 1 lb. ground beef
- 16 oz. Velveeta cheese this is the smaller box
- 20 oz. Rotel® diced Tomatoes with & Green Chiles (TWO 10-oz. cans) DO NOT DRAIN
- 2 tsp. chili powder
- 1/4 tsp. garlic powder
For serving
- corn chips
- chopped cilantro optional
Instructions:
- Set a large skillet over medium high heat on the stove top. Brown and crumble the ground beef, drain the fat.
- Add the cooked ground beef to the slow cooker, cube the velveeta and add on top of the beef.
- Pour over the can of rotel and sprinkle over the chili and garlic powder. Stir.
- Place the lid on the slow cooker. Cook on HIGH for 2 hours or until cheese is melted and the dip is hot.
- Keep on warm while serving.

Do Taco seasoning with your Hamburger and add 2 Tablespoons of sour cream and 2 Tablespoons of cream cheese
I make mine the same way but use 2 lbs of velveeta, makes a ton of dip!
Adding a can of cheddar cheese soup: at the end of cook , check for thickness, maybe a splash of milk:
In stead of velveeta cheese try cream cheese
I make it with ground beef and sausage.
I’ve made this recipe with sausage in place of ground beef and cream cheese instead of Velveeta. It’s also excellent.
Can you use shredded chicken instead of found beef?
I don’t see why not!
This looks really good. The only change I would make would be to drain on of the cans of tomatoes. Can’t wait to try it.
