Recipe Ingredients

  • Garlic & Herb Lentils – You can find these Hurst’s Brand Garlic and Herb Lentils at many grocery stores or order the lentils online. The package of lentils comes with an herb & garlic seasoning packet, which includes garlic, parsley, turmeric, and more!
  • Italian Sausage – One pound of mild Italian sausage, I find this in the pork meat section of the store.
  • Vegetables – Carrots, celery, leeks, and a can of diced tomatoes. I use leeks instead of onions for even more flavor, they are sauteed with the ground pork for a caramelized taste!
  • Other ingredients – Water. Salt to taste is added at the end of the cooking time.

Variations

  • Spicy Italian sausage or hot breakfast sausage can be used instead of mild. You can also use sliced kielbasa sausage.
  • Other popular vegetable choices are corn, green beans, or mushrooms.
  • Chicken broth can be used instead of water for even more flavor.

Step-by-Step Directions

  1. Place the lentils in a mesh strainer and rinse.
  2. Add the Italian sausage and the diced leeks to a large skillet set to medium-high heat. Brown and crumble the meat and leeks.
  3. Add the sausage, leeks, lentils, carrots, celery, diced tomatoes, and the herb and garlic seasoning mix to the crockpot.
  4. Add the 9 cups of water and stir. Place the lid on the slow cooker and cook on HIGH for 5 hours.
  5. When the cooking time is up, stir, then add the thinly sliced zucchini. Stir, again. Replace the lid and cook for an additional 30 minutes on HIGH.
  6. Add salt to taste and serve!

Serving Suggestions

  • Ladle the soup into bowls and serve with sides such as cornbread or focaccia bread.
  • To make this an even heartier meal, serve the lentil sausage soup over steamed white rice.

Slow Cooker Sausage Lentil Soup

This savory sausage lentil soup combines hearty lentils, flavorful sausage, and aromatic herbs for a comforting, restaurant-quality meal that’s perfect for any occasion.

Ingredients  

  • 15.5 oz. Hurst's® Garlic & Herb Lentils, (be sure to add the herb & garlic seasoning packet that is included with the lentils to the soup)
  • 1 lb. mild Italian sausage
  • 1 leek, diced (discard the coarse green parts, only leaving the white and light green parts).
  • 2 carrots , diced (about 1 cup)
  • 3 celery ribs, diced (about 1 cup)
  • 14.5 oz. can petite diced tomatoes, do not drain
  • 9 cups water

WAIT TO ADD

  • 1 large zucchini (or 2 small ones)
  • salt to taste, (add before serving)
