Slow Cooker Sausage Lentil Soup
This savory sausage lentil soup combines hearty lentils, flavorful sausage, and aromatic herbs for a comforting, restaurant-quality meal that’s perfect for any occasion.

Ingredients

Hurst's® Garlic & Herb Lentils
(be sure to add the herb & garlic seasoning packet that is included with the lentils to the soup)

lb.
mild Italian sausage
1
leek
diced (discard the coarse green parts, only leaving the white and light green parts).

carrots
diced (about 1 cup)
3
celery ribs
diced (about 1 cup)

can petite diced tomatoes
do not drain

water
WAIT TO ADD

large zucchini (or 2 small ones)
salt to taste
(add before serving)
Instructions
Place the lentils in a mesh strainer and rinse.
Add the lentils to the slow cooker.
In a large skillet set to medium-high heat, add the Italian sausage and the diced leeks. Brown and crumble the meat along with the leeks.
Add the sausage and leeks to the slow cooker along with the lentils.
Next add the carrots, celery, diced tomatoes and the herb & garlic seasoning mix.
Add the 9 cups of water and stir.
Place the lid on the slow cooker and cook on HIGH for 5 hours.
When the cooking time is up, stir. Then add the thinly sliced zucchini. Stir, again. Replace the lid and cook for an additional 30 minutes on HIGH.
Add salt to taste and serve!

The lentils do not need to be pre-soaked before cooking, just rinse and add to your slow cooker.
To store, place in airtight containers and refrigerate for up to four days or freeze for up to three months.
Variations
Spicy Italian sausage or hot breakfast sausage can be used instead of mild. Or you can use sliced kielbasa sausage.
Other popular vegetable choices are corn, green beans, or mushrooms.
Chicken broth can be used instead of water for even more flavor.
Serving Suggestions
Ladle the soup into bowls and serve with sides such as cornbread or focaccia bread.
To make this an even heartier meal, serve the lentil sausage soup over steamed white rice.
