Do I need to peel the potatoes?
No, Yukon Gold potatoes have thin skins, so I usually leave them on. You can peel them if you prefer an extra-smooth soup.
How to Store This Soup
Refrigerate promptly after making; it keeps for about 3 days. I do not recommend freezing potato leek soup, for both potatoes and cream don't freeze well.

Ingredients
- 2 large leeks, sliced
- 3 Tbsp. salted butter
- 2 cloves garlic, minced
- 3 lbs. yukon gold potatoes
- 7 cups chicken broth
- 2 bay leaves
- 3 sprigs fresh thyme, or 1 tsp. dried leaf thyme (not ground)
- 1 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 1/2 cups heavy cream
- fresh chives, chopped (garnish)
Instructions
- Slice the leeks, discarding the thick green pieces that are at the ends. Important to rinse the leeks AFTER slicing, they can sometimes have sand in them. Add to a large skillet with the butter and garlic and cook over medium-high heat until the leeks are softened and browned.
- Add to the crock pot along with the potatoes (peeled if you prefer), bay leaves, thyme, salt and pepper.
- Add the chicken broth and close the lid. Cook on high for 5 hours or low for 8 hours.
- Once the potatoes have softened enough, remove the thyme (if using fresh sprigs) and bay leaves. Use an immersion blender (or food processor or blender) to blend the soup. DO NOT overblend. If you are using a food processor or blender, blend the soup in small batches.
- Add the cream, blend again a little, then top with chives for garnish. Serve hot with crusty bread.

Can I add a little flour while sautéing the leeks and onion so that it will thicken more in the crockpot?

I thought the person who commented this was “restaurant quality soup” was being dramatic but they most definitely were not. This is my favorite potato soup recipe I’ve made, hands down!
Can you freeze it?
I’ve never had luck freezing potato anything, especially creamy potato soup.
As the weather is quite cool today, 63 degrees, I decided to try this recipe. I added real bacon bits and an uncut chili pepper. I must say it’s delicious… I will garnish with fresh cut chives, cilantro, fresh grated cheese or perhaps a dab of sour cream.
I’m not a fan of potatoes so do you think I could make it with cauliflower?
I don’t see why not! Here is my caulifower soup recipe – you could combine them.
Which type of cream is recommended for this recipe.
I would use heavy cream (or heavy whipping cream if that’s what your grocery carries) as stated in the recipe. Half and half ‘might’ work, but I believe it would be a less thick, creamy soup.
