These Slow Cooker Pork Chops are a lighter take on smothered pork chops, skipping the heavy sauce but still delivering amazing flavor—perfect for an easy weeknight dinner.

The pork chops cook up tender with plenty of onions and pair well with winter or summer sides. I don’t grill much in the summer—I prefer meat that’s fall-apart tender, and the crockpot always gets it just right

Boneless pork chops – Boneless pork chops are just the right size for individual portions.

Worcestershire sauce – A secret ingredient to make just about any slow cooker recipe even better!! If you’ve never looked up what Worcestershire sauce in it, it has: lemon, vinegar, molasses, anchovies, garlic, and more. What a combination!

Seasonings – Salt, pepper, garlic powder, red pepper flakes, and brown sugar.

Apple cider vinegar – Adds a layer of flavor and cuts back on the sweetness.

Sweet yellow onion – Use one large sweet yellow onion or two small ones.

Salted butter – Butter keeps the sauce rich and helps the chops stay tender

  • Tossed salad with dressing – We love making a semi-homemade dressing with ranch dressing mix, buttermilk, and mayo.
  • Rice pilaf – Grab a box of your favorite mix at the store.
  • Baked Potatoes – Aren’t baked potatoes the easiest side ever? Wash and dry your potatoes in the morning and wrap them in foil. They will be ready to pop in the oven when you arrive home from work.

What is the Best Onion to Use?

Sweet yellow onions go best with pork chops, though red onions will do if you can’t find sweet onions. The dish will look different with red onions, but still have great flavor.

Do Pork Chops have to Be Browned Before Going into a Slow Cooker?

No, pork chops don’t have to be browned before going into the slow cooker. Browning just adds extra flavor and better color, but the recipe still works without it.

Ingredients 
 

  • 2 lb. boneless pork chops, (about 4-5 chops)
  • cooking oil
  • 2 Tbsp. Worcestershire sauce
  • 1 Tbsp. apple cider vinegar
  • 2 Tbsp. brown sugar
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/8 tsp. red pepper flakes
  • 1 large sweet yellow onion, sliced
  • 1/3 cup salted butter, sliced

Instructions 

  • Start by setting a skillet on the stove top over medium high heat. When the pan is hot just enough cooking oil to coat the bottom of the pan. Brown the pork chops on both sides, don’t worry about cooking through the slow cooker will do that. Set aside for now.
  • Add the Worcestershire sauce, apple cider vinegar, brown sugar, salt, pepper, garlic powder and red pepper flakes in to the slow cooker, stir together with something that won’t scratch your slow cooker.
  • Add the browned pork chops, then add the onions and butter slices.
  • Cover and cook on Low for 6 hours without opening the lid during the cooking time.
  • Serve and enjoy!

    This is a wonderful recipe! I have a question, though: can I double or triple it? If so, would I just repeat the layers? Or would I put all the sauce in the bottom, all the pork chops, etc. Please answer bc I think this would be a dinner party hit!

    Made this recipe tonight and though the pork chops were dry, I’m still giving it 5 stars because of the flavor! In light of other comments, I think I did something wrong. You don’t give a time amount for browning of the chops first… I browned for 3+ minutes on each side… do you think that could be the problem? Or maybe my crock pot, cooks a little too hot to have kept them in for 6 hours. Any thoughts or suggestions would be greatly appreciated Sarah since I will definitely be making this again. Thanking you in advance ~ Gee

      You want to brown them in a skillet just until there is a little color on each side.

    Fantastic recipe. Loved the onions and the taste of the worchester sauce. I will have to confess to including half a can of Cream of Chicken soup to thicken the gravy. Wonderful flavors and the most tender chops I have ever cooked.

    The notes for this recipe mention slow cooker baked potatoes, then go on to say they’ll be ready to pop in the oven. Can you really make them in the Crock Pot?

      I fixed the confusion about that, this recipe may be too “wet” to add foiled baked potatoes in. I would do them in the oven.

    This recipe was delicious. The chops were tender and seasonings made it very tasty. The onions were nicely caramelized. I also added a few red and green bell pepper strips. About an hour before the pork chops are done, I added fresh sliced white mushrooms.
