Ingredients  

  • 2 lbs. thick-cut no-bone pork chops, about 3
  • 1 cup brown sugar
  • 2 Tbsp. tomato paste
  • 2 cups tomato sauce
  • 3 Tbsp. Worcestershire sauce
  • 2 Tbsp. dry mustard
  • 1 Tbsp. smoked paprika
  • 1 tsp. salt
  • 1 tsp. pepper
  • ½ cup chunky salsa
  • 1 Tbsp. apple cider vinegar
  • ½ Tbsp. chili powder
  • 2 Tbsp. sliced green onion

Instructions 

  • Mix together the brown sugar, tomato paste, tomato sauce, Worcestershire sauce, mustard, smoked paprika, salt, pepper, salsa, apple cider vinegar, and chili powder in a 4-6 quart crockpot until nice and smooth.
  • Place your pork chops into the crockpot and spoon a layer of sauce over them so that they are completely coated.
  • Cook on high for 3 hours or on low for 6 hours.
  • Once cooked completely, garnish with green onion and serve.

Do I have to use this sauce or can I use store-bought?
You could use a store-bought BBQ sauce here instead. Just replace all of the ingredients for the sauce with 4 or so cups of store-bought sauce. This homemade one is super easy, though, and I swear it’s worth it.
Can I make this ahead of time and freeze it?
Absolutely! Make the sauce and add it to a large freezer bag with the uncooked pork. Store it in the freezer for up to 3 months. Allow the pork to thaw in the fridge before layering it into the slow cooker with the sauce. Cook as you normally would.
