  • 1 lb. ground beef, (I use 10% fat)
  • 2-3 carrots, peeled and sliced
  • 2 medium russet potatoes (washed, not peeled), diced into small cubes
  • 1 white onion, diced
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 32 oz. beef broth (one carton)

For serving:

  • shredded cheddar cheese

Instructions
