Slow Cooker- 6 quart or larger (I own and use this one from Crock-Pot)
Ingredients

lb.
ground beef
(I use 10% fat)
2-3
carrots
peeled and sliced
2
medium russet potatoes (washed, not peeled)
diced into small cubes
1
white onion
diced
1
tsp.
oregano
1
tsp.
garlic powder
1
tsp.
onion powder
1
tsp.
salt
¼
tsp.
pepper

oz.
beef broth (one carton)
For serving:
shredded cheddar cheese

Instructions
Cook and crumble the ground beef in a skillet on the stove top. Drain off fat if there is any.
Add the ground beef, carrots, potatoes and onion to the slow cooker. Add the seasonings.
Pour over the beef broth.
Cook on low for 6-7 hours or until the potatoes are tender.
Ladle into bowls and serve topped with cheddar cheese.
