Recipe Ingredients
- Beef Chuck Roast: A hearty cut of beef that becomes tender and flavorful when slow-cooked.
- French Onion Soup: Take the guesswork out of adding the perfect base by grabbing a couple of cans of Campbell’s French onion soup mix. Want to use lipton onion soup mix, instead? Use one packet instead of the French onion soup along with 2 cups of water.
- Worcestershire sauce: Always the best option for enhancing meaty flavors.
- Sweet Onions: Sweet and caramelized, these onions bring a natural sweetness and deep, golden-brown color.
- Seasonings: Dried thyme, garlic powder, kosher salt, and black pepper is the perfect seasoning combination to make this a tasty meal.
Step-by-Step Directions
Step One – Add the roast to the crock pot.
Step Two – Pour over the French onion soup and Worcestershire sauce.
Step Three – Add the sliced sweet onion and seasoning.
Step Four – Cook on LOW for 9 hours or until the roast is very tender.
Step Five – Shred the slow cooker pot roast with two forks. Degrease the sauce with paper towels if necessary.
Step Six – Serve the fork tender shredded roast and enjoy.
How to Serve
- Serve your Slow Cooker French Onion Pot Roast over creamy mashed potatoes, allowing the onion-infused juices to mingle with the potatoes. Garnish the dish with fresh thyme sprigs, creating a classic comfort plate that’s as satisfying as it is comforting.
- For a hearty and rustic twist, pair the pot roast with baby potatoes. The savory French onion flavors will seep into the tender baby potatoes, creating a delightful side. Sprinkle fresh thyme leaves over the dish for a burst of freshness and visual appeal, adding a touch of elegance.
- Elevate your pot roast experience by serving it over egg noodles, allowing the rich French onion sauce to coat the noodles for a flavorful meal. Top it off with a sprinkle of fresh herbs like parsley or chives for a vibrant finish.
- Consider serving a side of cheese toast (think Swiss cheese, gruyere cheese, or any you prefer). Serving with cheesy bread will mimic those flavors of french onion soup!

I used a vension roast. Delicious! The meat was fork tender and juicy. This is a much better recipe than the regular pot roast.

I’m curious why you don’t brown the roast before putting into the crock pot?
Sarah Olson says
You can always run a roast we’re putting in the crockpot as it adds flavor. Most of my viewers prefer one step recipes.
Andrew Cardinal says
I assume you meant “brown” instead of “run.” Thanks for replying.
LARRY J DISTEFANO says
Good morning.
If I cut recipe in half and go with. 2lb. roast, would I cut the cooking time?
Sarah Olson says
The cooking time should remain about the same. It takes quite a bit of time to break down a roast.
