Slow Cooker Chili Cheese Casserole is everything comfort food should be! Chili, sour cream, cheese and Fritos come together to make an amazing casserole.
Other easy canned chili recipes are my cream cheese chili dip, or chili queso dip.
This is one of those throw it together comfort meals that is great for game day or even a quick dinner. Fritos and chili are a match made in heaven. I didn’t know how the Fritos would do on the bottom of this, I was hoping for the best. I found that Fritos soaked up some of the chili and even browned some along the bottom edges.
My inspiration for this recipe came from an old cookbook I got from a woman off a Facebook group, the woman I met had inherited all of her aunt’s things and her aunt had collected hundreds of cookbooks. I bought about 10 vintage cookbooks from her, she had some very unique books!
The cookbook I found this recipe in is called Foreign Foods Recipes from Home Economic teachers. It took me a while to realize all the recipes weren’t authentic, they are more on the easy side, which is fine!
How to make this:
It doesn’t take many ingredients to make this chili cheese casserole.
You will need these ingredients:
- Frito Chips
- Canned chili – I use Nalley original
- Shredded cheddar cheese
- Diced white onion
- Sour cream
These ingredients are layered in the slow cooker. Add the lid and cook for 2 hours on high.
This recipe is perfect for game day or even a lazy Sunday dinner. Growing up we only ate canned chili and I love this meal that transforms canned chili into a fun meal!
When I reheated this recipe up the next day it was thicker but still great. I like to add more Fritos on top of each serving. I hope you have a great week!

Slow Cooker Chili Cheese Casserole
Equipment Needed:
Ingredients:
- 9.25 oz. bag fritos
- 30 oz. Nalley Original Chili
- 3 cups shredded sharp cheddar cheese
- 16 oz. sour cream
- 1/2 cup diced white onion
Instructions:
- Spray slow cooker with non-stick spray. Sprinkle 1.5 cups of fritos to the bottom of the slow cooker. Then spoon over the chili. Then sprinkle over half the onions. Sprinkle over half of the cheese. Spread over all the sour cream. Top with the rest of the cheese and onions.
- Cover and cook on high for 2 hours.
- Serve with the additional fritos on top. Enjoy!

This is one of my family’s favorite dinners. Since my daughter is a vegetarian, I use Stagg Vegetarian 4 Bean Garden chili. It contains peppers, tomatoes, and corn. It works really well for this recipe.

My slow cookers settings are high for either 4 or 6 hours and then low for 8 or 10 hours. What would you suggest for the time?
You set it for high for 4 hours, set a timer on your phone for 2 hours. Can’t cook it any longer than 2 hours.
Sounds like my Frito Pie with exception of the sour cream, and I don’t use a crockpot. I’m going to make this for our next camping trip.

A crockpot liner suggestion for your consideration: I can’t tell you how many times the ingredients are already IN my crockpot before I remember to insert the liner! I learned the hard way and now put the box of liners in the washed crockpot before putting it away. That way, I’ll never forget to use one the next time I cook something!

Hi! My family loved this recipe. I substituted undiluted cheddar cheese soup for the sour cream (since none of us care for it). Everything else else I put in as directed. The recipe was so good! Please keep them coming!
can you freeze this recipe ?
I don’t think sour cream freezes too well. I wouldn’t myself.
If I wanted to throw in some frozen shredded hashbrowns, do you have any suggestions, in your experience, on how I should adjust the cooking time? In addition, if I should put it in after the chili or before to ensure they are cooked properly?

For those saying they don’t like sour cream I wonder if cubed cream cheese might be a good substitute. Or blend cream cheese with some ranch seasoning or cumin, then spread over like the sour cream layer in the recipe.
Did you try this with cream cheese instead of the sour cream? Just wondering if it’s any good that way.
I have used plain Greek yogurt as a substitute for sour cream.
