Recipe Ingredients

  • Sweet Potatoes– You want to peel and dice the sweet potatoes before adding to the stew.
  • Celery– Dice the celery into bite size pieces
  • Yellow Onion– I prefer the flavor or yellow onion but white onion will also work.
  • Baby Carrots– Baby carrots save time but you can also peel and dice larger carrots.
  • Corn Kernels– You can use any kind of corn you like canned, frozen or cut off the cob
  • Beef Roast –  You want to make sure the beef is cubed
  • Tomatoes–  This recipe uses canned tomatoes. You want to use the tomatoes undrained.
  • Seasonings– Minced garlic,Worcestershire Sauce, Paprika, Dried Parsley, Thyme, Salt and Pepper, and a bay leaf. You can also add Fresh Parsley
  • Beef Broth– This creates the broth of the stew

Step By Step Directions

Step One – Add the beef, vegeatbles, seasonings, beef broth and worcestershire sauce to the slow cooker.

Step 2- Stir everything together. Cook it on LOW on low 7-8 hours. Remove the bay leave and serve. Garnish with fresh parsley.

  • Add some heat. Adding red pepper flakes to the sweet potato stew. Wait until the end of the cooking process an add some red pepper to give it some heat that goes so well with the sweetness of the potatoes.

How long does it last?

This stew will last for about 3 days in the refrigerator. If you are not going to finish it in time, be sure to prepare it for the freezer and freeze it before it goes bad.

Can it be frozen

This is a great recipe to freeze. You can make a double batch of sweet potato stew so that you have it on hand for those days you are too busy to cook. Freeze this soup for up to 3 months.

How to Store

You want to make sure to keep this stew in the refrigerator. Once it is cooled, place it in an airtight container. You can keep it in the slow cooker but you need to make sure that it is covered. If the lid doesn’t fit well, you turn it upside down! You can also wrap it with plastic wrap.

Classic beef stew but with a twist! Tender sweet potatoes instead of potatoes. Beef and sweet potatoes are a perfect match!

Ingredients 
 

  • 1.5 lbs. cubed beef stew meat
  • 2-3 medium-sized sweet potatoes, cut into 1” pieces
  • 1/2 cup chopped celery
  • 1 small yellow onion, diced
  • 2 cups baby carrots
  • 1 cup corn kernels, canned, frozen or cut off the cob
  • 15 oz. can diced tomatoes, undrained
  • 1 Tbsp. minced garlic
  • 1/2 cup Worcestershire sauce
  • 1 tsp. paprika
  • 1 tsp. dried parsley
  • 1/2 tsp. dried leaf thyme, not ground
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 cups beef broth
  • 1 bay leaf
  • fresh parsley for garnish, optional

Instructions 

  • Add all ingredients to your slow cooker except the bay leaf. Stir. Add the bay leaf on top so it's easier to find after the cooking time is up.
  • Place lid on crockpot and cook on high for 4 hours or on low for 7-8 hours.
  • Remove bay leaf prior to serving.
  • Garnish with parsley, if desired. Enjoy!
