What Makes This Recipe a Keeper

    • There is no cream soup in this recipe, and it doesn't need it! Butter, chicken broth, and the pork juices give the stuffing all the moisture it needs.
    • This pork chop and stuffing recipe is elevated by adding freshly chopped vegetables mixed into the stuffing. It gives the dish a homemade touch you can't get with just the box mix.
    • The pork cooks to perfection thanks to the low and slow cooking time; it's tender and goes great with a bite of the stuffing.
    • Pork chops and stuffing make this a great fall comfort food dinner without having to make several separate dishes.

    The Ingredients

Pork Chops: I use thick, boneless pork chops for this.

Seasonings: Season up those pork chops with salt, pepper, Italian seasoning, garlic, and onion powder.

Stuffing: You will want to grab 2 boxes of pork stove-top stuffing mix.

Vegetables: Carrots, celery, and onion are classic stuffing vegetables that add texture and homemade flavor.

Butter and Broth: To moisten the stove-top stuffing and keep the pork moist, we add butter and chicken broth.

    Tips and Variations

Don't Overcook: This isn't a recipe you'll want to cook all day. It only needs about 5 hours on LOW. Cooking it much longer can dry out the pork chops and cause the stuffing to burn around the edges.

Stuffing Type: This recipe was developed for stove-top stuffing (it's the best-tasting brand in my opinion). You can switch the flavor type, such as using chicken or cornbread flavor instead of pork.
Apples: Add 1-2 diced apples for more fall flavor! They go great with the pork.

How to Serve Pork Chops and Stuffing

Add a Side: Though this is a complete meal, you can add mashed potatoes to make the meal feel even heartier.

Top it Off: Add cranberry sauce for a festive touch and a green vegetable to round things out.

Can I use bone-in pork chops?

Yes, bone-in pork chops work just as well and cook similarly to boneless chops. They may overlap a little more in the slow cooker, but that's perfectly fine.

Do I prepare the Stove Top stuffing first?

No. Add the stuffing mix straight from the box. The chicken broth, melted butter, and juices from the pork chops will moisten it as it cooks.

    How to Video

    Ingredients

    • 2 lbs. pork chops, Regular or thick cut
    • 1/2 tsp. salt
    • 1/4 tsp. black pepper
    • 3/4 tsp. Italian seasoning mix
    • 1/2 tsp. onion powder
    • 1/2 tsp. garlic powder
    • 14 oz. Pork stove-top stuffing mix, (two 7-oz. boxes)
    • 1/2 cup melted butter
    • 2 cups chicken broth
    • 1 cup diced carrots, (about 2 large carrots)
    • 1 cup diced celery, (about 3 celery ribs)
    • 1 small white onion, diced

    Instructions

    • Add the pork chops to the slow cooker.
    • Sprinkle the seasonings evenly over the pork chops. I like to mix the seasonings together in a small dish first, then sprinkle them over the pork.
    • Add the carrots, onion and celery.
    • Pour over the boxes of stuffing.
    • Using a spoon, mix together the vegetables and stuffing and spread to an even layer.
    • Trying to drizzle over evenly, pour over the melted butter and chicken broth.
    • Place the lid on the slow cooker and cook on low for 5 hours.
    • As the pork chops cook it will add more moisture to the dish.

    Sarah's Notes

Stuffing Texture: Don't be alarmed if the stuffing seems dry. As the pork chops cook, they will release more juices and add moisture to the stuffing.
Stuffing Brand: I like stove-top for this recipe, you can use the store brand that is similar to stove top (don't use other brands such as Mrs. Cubbison's or Pepperidge farms).
