Slow Cooker Chili Cheese Casserole is everything comfort food should be. Chili, sour cream, cheese and Fritos come together to make an amazing casserole. This is one your family is sure to ask for time and time again.
Other easy canned chili recipes are my cream cheese chili dip or chili queso dip.

Chili casserole with Fritos is a delicious and quick dish that combines the rich flavors of chili, melted cheese, and crunchy Fritos into a comforting and satisfying meal. It’s perfect for cozy evenings or gatherings with friends and family. Easy to prepare, this dish involves layering chili, Fritos, and cheese in a baking dish before baking until bubbly and golden.
Another recipe we love to serve for game day along with this is slow cooker barbecue meatballs or slow cooker frito pie!
Ingredients for Chili Cheese Casserole
Yes, only five ingredients. Find full recipe amounts in the recipe card below the images.
- Frito Chips: The original corn chips work best for this recipe; however, you can also use different flavors to switch things up a bit.
- Canned chili: I use Nalley Original, but you can use any brand you prefer. You can also use leftover crockpot chili.
- Shredded cheddar cheese: I recommend using block cheese and shredding it yourself. Bags of pre-shredded cheese typically have a caking agent on them that prevents the cheese from melting properly.
- Diced white onion: Adds both crunch and flavor to this delicious appetizer.
- Sour cream: Helps create a slightly creaminess to the dish as well as a classic chili taste.

Step Four – Sprinkle over half of the cheese.
Step Five – Spread over all the sour cream.
Step Six – Top with the remaining cheese evenly.
Step Seven – Sprinkle over the remaining onions.
Step Eight – Cover and cook on HIGH for 2 hours.
Step Nine – Serve with the additional Frito corn chips on top. Enjoy!

“This is one of my family’s favorite dinners. Since my daughter is a vegetarian, I use Stagg Vegetarian 4 Bean Garden chili. It contains peppers, tomatoes, and corn. It works really well for this recipe.”

My daughter just asked for seconds! That’s how you know if a recipe is a hit.
I did replace onion with Rotel. I thought it was very good. I topped with more fritos.
Sounds great!
I don’t care for Fritos; would Doritos Nacho Cheese be a good substitute?
I think so!
Love this and its a hit at gatherings. Can the recipe be doubled?
Yes! It can be doubled with no problems.
sooo what to use if Nalley Original Chili is not available
I use Hormel with no beans
A crockpot liner suggestion for your consideration: I can’t tell you how many times the ingredients are already IN my crockpot before I remember to insert the liner! I learned the hard way and now put the box of liners in the washed crockpot before putting it away. That way, I’ll never forget to use one the next time I cook something!
Such a great tip! I will do that in my RV. I ALWAYS forget.
I do this too! Great tip!
Hi! My family loved this recipe. I substituted undiluted cheddar cheese soup for the sour cream (since none of us care for it). Everything else else I put in as directed. The recipe was so good! Please keep them coming!
can you freeze this recipe ?
I don’t think sour cream freezes too well. I wouldn’t myself.
If I wanted to throw in some frozen shredded hashbrowns, do you have any suggestions, in your experience, on how I should adjust the cooking time? In addition, if I should put it in after the chili or before to ensure they are cooked properly?
Thank you so much! I came across your website recently and have loved the easy recipes. Its been a lifesaver in this house!
Hi! Itโs hard to say without trying. I apologize.
Do you eat this as is? Or with chips or crackers?
Eat as is. Can top with more Fritos.
For those saying they don’t like sour cream I wonder if cubed cream cheese might be a good substitute. Or blend cream cheese with some ranch seasoning or cumin, then spread over like the sour cream layer in the recipe.
Did you try this with cream cheese instead of the sour cream? Just wondering if it’s any good that way.
I have used plain Greek yogurt as a substitute for sour cream.
