We love this Slow Cooker Salsa Beef piled on tortillas! A simple roast slow-simmered with two ingredients, and the results are incredible.

One of the most popular recipes on my site is Slow Cooker Salsa Chicken, but I’ve learned that salsa and beef are an even better pair after making my Slow Cooker Steak Burritos. Salsa and beef in the crockpot are truly a match made in heaven—once you try this chuck roast salsa beef, you may never go back to the chicken version!

Key Ingredients

Chuck Roast: This type of roast is marbled and turns out super tender in the slow cooker.

Salsa: Use a basic jarred salsa in the heat style you like. We use “medium” Pace Picante.

Taco Seasoning: One packet is all you need, it has chili powder, onion powder, cumin, and more!

How to Make Salsa Beef in the Slow Cooker

  1. Season the roast with taco seasoning.
  2. Add salsa and slow cook until tender.
  3. Shred the beef and mix it back into the sauce.

Tips & Variations

Salsa Swap: Change up the flavors of the recipe by using a salsa verde or chipotle salsa! You can continually make it different! You can easily switch it up each time you make it.

Veggies: You can add a white onion and poblano pepper to make the salsa beef even better!

Meat Change: You can also make this recipe with chicken breasts for salsa chicken. But other unique choices are beef stew meat, or pork tenderloin.

How to Serve Salsa Beef

Tacos: This is the most classic way to serve. Use crunchy corn shells or soft flour tortillas; just be sure to warm either one you use for your shredded beef tacos.

Nachos: This is how we serve the tender salsa beef. We melt cheese on tortilla chips, then pile the salsa beef on top of the chips and cheese.

Toppings: Top your beef with sour cream, cheddar cheese, tomatoes and green onions. SO GOOD!

Sides: If you have time to make sides, make Slow Cooker Refried Beans or Mexican Rice.

Can Frozen Beef be Used in the Slow Cooker?

No — always thaw your beef first. If cooked from frozen, the meat can stay too long in the “danger zone,” which increases the risk of harmful bacteria developing.

Ingredients 
 

  • 3-4 lb. beef chuck roast
  • 24 oz. jar salsa, (this is the larger jar) I use pace picante
  • 1 oz. taco seasoning , packet

For serving

  • tortillas and toppings for serving

Instructions 

  • Place the chuck roast in the slow cooker.
  • Sprinkle over the taco seasoning packet.
  • Pour over the salsa.
  • Place the lid on the slow cooker and cook on low for 8-10 hours or until the beef is tender.
  • Shred the beef with two forks and remove any fatty pieces from the slow cooker.
  • Lay a paper towel on top briefly to soak up excess grease, then discard.
  • Serve in taco shells and more!

    I have not tried this yet, but it sounds like something my husband and I would enjoy in tacos.
    Anticipating leftovers, can this Salsa Beef be frozen?
