How to make Beef Fajitas in the Crockpot:

Follow my easy guide to make easy fajitas in the slow cooker. There is no babysitting this recipe, just set and forget!

  1. Add sweet yellow onions to the slow cooker. I cut these into rings.
  2. Next add thick-cut bell peppers, cutting these in larger strips will help the pepper stay intact during the slow cooking time.
  3. Add beef strips on top of the vegetables. These beef strips are often labeled “Stir fry beef strips”. Or you can cut a roast into strips if you can’t find stir fry meat.
  4. Add chili powder, garlic powder, salt, and pepper. Squeeze over the juice of one lime. Now pour over a jar of LA VICTORIA® Thick ‘n Chunky salsa. The salsa is made with tomatoes and peppers picked at the peak of ripeness, LA VICTORIA® Thick ‘n Chunky Salsa delivers refreshing flavor to this recipe.

  • Place the lid on the slow cooker.
  • Cook on HIGH for 4 hours or LOW for 6 hours.

Slow Cooker Salsa Beef Fajitas

Tender beef simmers with La Victoria salsa, onion, peppers and lime.

Ingredients 
 

  • 2 lbs. beef strips, (often labeled stir fry beef strips) or cut a 2lb. beef roast into strips.
  • 1 yellow onion, cut into rings
  • 2 bell peppers, cut into large strips (choose 2 different colors)
  • 1 Tbsp. chili powder
  • 1/4 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 lime
  • 16 oz. LA VICTORIA® Thick 'n Chunky Salsa, use mild or medium

For serving

  • tortillas, (corn or flour) warmed
  • cheese
  • sour cream
  • LA VICTORIA® Thick 'n Chunky salsa

Instructions 

  • Add the onion and bell peppers to the slow cooker.
  • Place the beef strips over the veggies.
  • Sprinkle the beef with the chili powder, garlic powder, salt and pepper.
  • Cut the lime in half and squeeze the juice over the meat and vegetables.
  • Pour over the LA VICTORIA® Thick 'n Chunky Salsa.
  • Place the lid on the slow cooker.
  • Cook on HIGH for 4 hours or LOW for 8 hours.
  • Serve with desired tortillas and toppings. Enjoy!

    This was great! If anything a little watery, I would recommend draining the salsa maybe before adding it, that may have had something to do with the wateryness, but other than that tasted great!!

    I made this yesterday it was excellent I used different brand salsa and added 1/2 tsp cumin I followed recipe otherwise. Absolutely delicious!!

    I fixed this and it was terrible! Too soupy and I even drained anything that had liquid in it . Also didn’t like the chili powder in it! I will go back to fixing it in a skillet! Wouldn’t recommend this recipe….
