Make delicious chicken and broccoli with plenty of cheese right in the slow cooker. Wonderful over rice for a complete meal.

My mom would make her famous cheesy broccoli chicken recipe at least once a month. Her recipe took way longer to put together but it was made with love. Here is my easy version I like to make in the slow cooker and we serve it over jasmine rice.
How to make Cheesy Broccoli Chicken:
- Start with cubed boneless skinless chicken breasts. You can leave them whole and shred them at the end if desired.
- Next add lots of mushrooms and onions.
- Add about 2 heads of broccoli, you can even use and cut up the stem.
- Then add cream of mushroom soup (2 cans) and broccoli. Top with cheese (save some cheese for servings as well).
Cook’s Notes
The rice must be cooked separately for this recipe. Rice does not cook properly in the slow cooker. This dish is best served over rice that is made on the stove-top or rice-maker.
Frozen broccoli works great in this recipe. Use 4-6 cups of frozen broccoli.
If you or someone you are making this for does not like cream of mushroom soup and cream of chicken can be used instead. You can also leave out the fresh mushrooms too if you do not like mushrooms at all.
My Serving Suggestions
This cheesy broccoli chicken tastes the best over rice. Though you can serve over mashed potatoes or noodles.
Add additional cheese to each serving for even more flavor.
You can add a green vegetable or salad to complete the meal.

“I tried this, but, I used one can of cream of mushroom soup and one can of cream of chicken soup. It was delicious. If you are diabetic (like me) you can skip the carbs in the rice and just eat as is. Still delicious! Thanks.”

Just what I was looking for. I will defiantly try this.
I wanted to love this recipe but itโs just ok. I used cream of chicken instead of mushroom which gives it a better flavor but with fresh broccoli and not frozen chicken breasts it still came out a little watery and the broccoli was soggy. The flavor was good, but itโs just not quite with the soggy broccoli and slightly watery sauce.
Hi, what can I use in place of the cream soups? I love them but don’t have time to get them. Any suggestions?
Cream cheese or heavy cream will work, you may have to add more seasonings.
Does this not need any liquid for the chicken at the bottom?
No, the slow cooker is not like an instant pot. There is plenty of liquid in the chicken and cream soup for this recipe.
Hi there, I used frozen broccoli but it turned mushy and soft by the end (6 hours in low). Do you think I could add it closer to the end instead, and if so could you recommend when would be best to add it? Thank you!
It does take a while to get soft, I think about an hour will work.
definitely missing something! should have listened to other reviews, I thought using fresh broccoli would potentially eliminate the watery texture but unfortunately it didnโt, luckily I had heavy cream therefore added that to make the consistency a bit better.
Can I cook on low 8 hours?
Main as per instructions, both my husband and I like this we will add it to our recipe rotation
