How to Make Chicken, Potatoes and Green Beans

Step One: Make the homemade dressing by mixing the olive oil, lemon juice and seasonings.

Step Two: Add the chicken to the center of the slow cooker, add the cut green beans on one side, then the cut potatoes on the other side.

Step Three: Pour over the homemade dressing over the chicken, potatoes and green beans.

Variations

This recipe has been tested many times as is. If you want to make some changes, here are great ideas.

  • Use a different vegetable than green beans. You can use: Broccoli, asparagus, canned or fresh corn, baby carrots, or use extra potatoes!
  • Use Italian dressing instead of the homemade (such as Newman’s own).
  • Or use a stick of melted butter and sprinkle a packet of Good Seasons Italian dressing mix over. You can find the Italian dressing mix on the salad dressing aisle next to the ranch dressing packets.

Ingredients 
 

  • 2 lbs. Boneless Skinless Chicken Breasts
  • 1/2 lb. fresh green beans, trimmed (about 2.5 cups)
  • 1 1/4 lb. diced red potatoes, about 4 cups

Homemade dressing ingredients:

  • 1/3 cup FRESH lemon juice (NOT BOTTLED), (1 large or 2 small lemons)
  • 1/4 cup olive oil
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. onion powder
  • 2 garlic cloves, minced

Instructions 

  • Start by placing the chicken the middle of the slow cooker. Next, add the green beans on one side. Then for the potatoes, you will need to mound them high off to the other side.
  • In a medium-sized bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder, and garlic cloves.
  • Pour this mixture evenly over the chicken, green beans and potatoes.
  • Cover and cook on HIGH for 4 hours or LOW for 7 hours, without opening the lid during the cooking time.
  • Note- Do NOT use lemon juice out of squeeze bottle, the recipe will not turn out correct.

Sarah’s Notes

Why can’t I use bottled lemon juice?
Bottled lemon juice in recipes can taste bitter. This recipe has been tested with fresh lemon juice. Many reviews who have used bottled instead have not liked the meal for the flavor of the bottled lemon juice isn’t right for this recipe.
How to Store:
Place in airtight containers and refrigerate for up to three days. I do not recommend freezing this for potatoes don’t reheat well after being froze.

    I don’t have any lemons or lemon juice, can I just leave it out or use something else?

        I followed your recipe to the t and really was so excited to eat it after it had been cooking all day. I used the fresh lemons for the juice and it completely overpowered the chicken, and the potatoes soaked up every last bit of lemon, which ruined them in my opinion. My husband even mentioned all he could taste was the lemon. Everything turned out perfectly moisture wise, no dry chicken or potatoes or beans. Just disappointed I couldn’t taste any other ingredients because the lemon overpowered this dish 🙁

        Bottled lemon juiced tastes different, and is not what I used in this recipe. A few people used it and did not like. I would buy real lemons, I can’t think of a substitute. I apologize!

    ummm what size slowcooker? That’s the one thing that bugs me about online recipes… almost no one bothers to mention the size of the slowcooker. I have three different sizes myself. Obviously the 2.5 qt won’t do, but should I use my 4qt or 6qt?

      I usually add the size, but missed it for this recipe. I used a 6-quart oval.

      Someone else cooked the original recipe for 8 hours on low and said it turned out fine. I personally haven’t tried that yet.

        I did not, that is just one rack. I have done two racks of ribs in the crock pot before, I still cut each rack into fourths. Turned out great.

    Omg this was the best slow cooker chicken my husband and i have ever had! The only thing i added was onions and made extra seasoning,the flavor on this recipe is awesome!! also smelled soooo good,i cooked mine on low for 8 hours it turned out perfect. This is a keeper a10**********

      I’ve made crock pot recipes with broccoli and asparagus. They don’t look great after they are cooked in the crock pot, even worse than the green beans. But I think it would taste fine!
