How to Make Chicken, Potatoes and Green Beans

Step One: Make the homemade dressing by mixing the olive oil, lemon juice and seasonings.

Step Two: Add the chicken to the center of the slow cooker, add the cut green beans on one side, then the cut potatoes on the other side.

Step Three: Pour over the homemade dressing over the chicken, potatoes and green beans.

Variations

This recipe has been tested many times as is. If you want to make some changes, here are great ideas.

  • Use a different vegetable than green beans. You can use: Broccoli, asparagus, canned or fresh corn, baby carrots, or use extra potatoes!
  • Use Italian dressing instead of the homemade (such as Newman’s own).
  • Or use a stick of melted butter and sprinkle a packet of Good Seasons Italian dressing mix over. You can find the Italian dressing mix on the salad dressing aisle next to the ranch dressing packets.

Ingredients 
 

  • 2 lbs. Boneless Skinless Chicken Breasts
  • 1/2 lb. fresh green beans, trimmed (about 2.5 cups)
  • 1 1/4 lb. diced red potatoes, about 4 cups

Homemade dressing ingredients:

  • 1/3 cup FRESH lemon juice (NOT BOTTLED), (1 large or 2 small lemons)
  • 1/4 cup olive oil
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. onion powder
  • 2 garlic cloves, minced

Instructions 

  • Start by placing the chicken the middle of the slow cooker. Next, add the green beans on one side. Then for the potatoes, you will need to mound them high off to the other side.
  • In a medium-sized bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder, and garlic cloves.
  • Pour this mixture evenly over the chicken, green beans and potatoes.
  • Cover and cook on HIGH for 4 hours or LOW for 7 hours, without opening the lid during the cooking time.
  • Note- Do NOT use lemon juice out of squeeze bottle, the recipe will not turn out correct.

Sarah’s Notes

Why can’t I use bottled lemon juice?
Bottled lemon juice in recipes can taste bitter. This recipe has been tested with fresh lemon juice. Many reviews who have used bottled instead have not liked the meal for the flavor of the bottled lemon juice isn’t right for this recipe.
How to Store:
Place in airtight containers and refrigerate for up to three days. I do not recommend freezing this for potatoes don’t reheat well after being froze.

    ThIs sounds so yummy! I’m wondering though, could I just put the potatoes on both sides and cook the green beans separately? I like my green beans cooked a specific way, and I’m afraid they would be too mushy for me if I put them in the crock pot that long!
    Also, do you happen to know how many servings this is, so I can figure out my calories, fat, etc for the recipe?

        Hi, can someone plz get back to me! I’m cooking this just now, iv got 4 boneless & skinless chicken breasts in the slow cooker, im just going to add the of my potatoes & that. But iv ran out of olive oil, iv got others oils, is there anything I can use in place of the olive oil, as it’s holding me back… Thanks for the recipe, it looks delious, but I’m not sure about the lemon juice, as I don’t think my hubby will like it, I was going to use chicken stock inplace of the olive oil, & use less lemon juice…. What do u think, can u help me plz, as I would really appreciate it!! xx

        This is a couple years too late for your need but i’ve made this a couple times & I use Annie’s lemon & chive dressing – because I had it and it was easy , it turns out really great.

        We made this when having another couple over for dinner, and had the same exact issue with the chicken being too dry. The seasoning was delicious, though.

        Has anyone tried this with boneless skinless thighs? I don’t care for slow cooked boneless skinless breasts. Someone mentioned lack of color…I *always* brown my meats before putting in the slow cooker.It is an extra step and an extra pot, but it makes a big difference in appearance (and taste, IMO).
