Ingredients for slow cooker meatloaf dinner on a table.

Ingredients for Meatloaf Dinner

For the Meatloaf:

  • Ground beef – lean, so it’s not greasy
  • Eggs and panko breadcrumbs – bind everything together
  • Lipton Onion Soup mix – for bold, savory flavor
  • Ketchup and Worcestershire – classic meatloaf seasoning

For the Sides:

  • Baby gold potatoes – cook tender right alongside the meat
  • Carrots – sweetened with butter and honey

Topping:

  • Ketchup, mustard, and brown sugar – for that sweet, tangy glaze on top

Variations

Here are a few easy variations to customize this crockpot meal to your taste or what you have on hand.

  • Ground chicken or turkey can be used, though a touch more panko bread crumbs may be needed to hold the meatloaf together.
  • Instead of carrots, you can use green beans, or corn on the cob quarters.
  • For the glaze, you can use barbecue sauce or salsa instead.

This cozy crockpot dinner features tender meatloaf, buttery potatoes, and honey-glazed carrots—all cooked together in one easy, hands-off meal.

Ingredients

For the Meatloaf:

  • 1 lb. ground beef, I use 7% fat for it is less greasy
  • 2 large eggs
  • 1 oz. Lipton Onion Soup mix
  • ¼ cup ketchup
  • ½ cup panko bread crumbs
  • 1 Tbsp. Worcestershire sauce

For the Potatoes:

  • ½ lb. baby gold potatoes, cut in half
  • 4 Tbsp. salted butter, sliced
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt

For the Carrots:

  • 3 large carrots, sliced half an inch thick on the diagonal
  • 4 Tbsp. salted butter, sliced
  • 1 Tbsp. honey

Meatloaf Topping (wait to add)

  • 1/2 cup ketchup
  • 1 tsp. mustard
  • 1 Tbsp. brown sugar

Instructions

  • Add the meatloaf ingredients to a large bowl. Mix with a clean hand, shape into a small loaf, and add to the center of the slow cooker.
  • Add the halved potatoes to one side of the meatloaf and top with the four tablespoons of butter and sprinkle with the salt and garlic powder.
  • On the other side of the meatloaf, add the carrots and top with 4 tablespoons of butter and drizzle over the honey.
  • Place the lid on the slow cooker and cook on LOW for 5-6 or until the meatloaf is firm and cooked through and the vegetables are tender.
  • When the cooking time is done, mix the meatloaf topping and spread over the meatloaf.
  • Serve and enjoy!

So easy to make and absolutely delicious. Made green beans instead of carrots. This will go into our rotation of meals!
