This cozy crockpot dinner features tender meatloaf, buttery potatoes, and honey-glazed carrots—all cooked together in one easy, hands-off meal.

Ingredients
For the Meatloaf:

lb.
ground beef
I use 7% fat for it is less greasy

large eggs
1
oz.
Lipton Onion Soup mix

cup
ketchup

panko bread crumbs

Tbsp.
Worcestershire sauce
For the Potatoes:
½
lb.
baby gold potatoes
cut in half

salted butter
sliced

tsp.
garlic powder
1/2
tsp.

For the Carrots:
3
large carrots
sliced half an inch thick on the diagonal

honey
Meatloaf Topping (wait to add)

Instructions
Add the meatloaf ingredients to a large bowl. Mix with a clean hand, shape into a small loaf, and add to the center of the slow cooker.
Add the halved potatoes to one side of the meatloaf and top with the four tablespoons of butter and sprinkle with the salt and garlic powder.
On the other side of the meatloaf, add the carrots and top with 4 tablespoons of butter and drizzle over the honey.
Place the lid on the slow cooker and cook on LOW for 5-6 or until the meatloaf is firm and cooked through and the vegetables are tender.
When the cooking time is done, mix the meatloaf topping and spread over the meatloaf.
Serve and enjoy!
