This vintage recipe for slow cooker no-peek chicken has tender chicken, onion flavor, and rice! A great dinner recipe that is a one pot meal.

What is No Peek Chicken?

No-peek chicken is a casserole dish made with creamed soups, onion soup mix, rice, and chicken. The meaning of “no-peek” is that you want to keep this casserole covered while cooking and not to “peek” at it, for the rice won’t cook as well if you do.

This crockpot no-peek chicken recipe is a retro recipe you must try. We use minute brand rice (which is parboiled and dried). Minute brand rice cooks up well in the slow cooker compared to regular grain rice, for regular grain rice gets gummy since the slow cooker doesn’t not get hot enough, fast enough.

Recipe Ingredients

  • Chicken Breasts – One and a half pounds of boneless skinless chicken breasts is all you need. You can use chicken thighs.
  • Minute Rice – This is very important not to substitute this, this recipe is created around this type of rice.
  • Cream Soups – You will need a can of cream of chicken and a can of cream of mushroom soup.
  • Lipton Onion Soup Mix – Find this on the same aisle as canned soups in a box. You need just one packet.
  • Seasonings – A touch of garlic powder and black pepper help season the dish (the main flavor comes from the onion soup mix).

  1. In a small bowl, mix the cream soup, seasonings, minute brand rice, and water (don’t add the onion soup mix) until combined.
  2. Spray the slow cooker with non-stick spray. Add half of the rice mixture to the slow cooker.
  3. Add the chicken breasts on top.
  4. Then spread over the remaining rice mixture.
  5. Sprinkle over the onion soup mix.
  6. Cook on HIGH for 3.5 hours.

How to Serve

  • This is a full meal in itself in one pot; no sides are really necessary.
  • If you want to round out the meal, add a green side dish such as steamed broccoli or a fresh green salad.

Recipe FAQs

Can I use regular rice?

No, this recipe was created using dried par-boiled rice (Minute Brand Rice). There would not be enough liquid for standard rice, and standard rice does not cook well in a slow cooker.

How to store:

Store as you would any casserole! In the fridge for up to four days or in the freezer for up to three months.

Why is there no salt in this recipe?

There is plenty of salt in the cream soup and onion soup mix. Do not add additional salt.

  • 1 ½ lbs. boneless skinless chicken breasts
  • 10.5 oz. cream of chicken soup, (1 can)
  • 10.5 oz. cream of mushroom soup, (1 can)
  • 1 can water, measured from one of the cans above
  • ½ tsp. garlic powder
  • ¼ tsp. pepper
  • 2 cups Minute® rice, not standard rice
  • 1 oz. packet Lipton® onion soup mix

Instructions 

  • Add the cans of soup, one can of water, garlic powder, pepper and Minute rice to a large bowl. Mix well.
  • Spray the slow cooker with non-stick spray.
  • Add half of the above mixture in the slow cooker. Lay over the chicken breasts. Spread over the rest of the rice mixture.
  • Sprinkle over the soup mix.
  • Cover and cook on HIGH for 3.5 hours. Do not peek during the cooking time!
  • Serve and enjoy!

  • Do not substitute the minute brand rice. This recipe was created using dried par-boiled rice (Minute Brand Rice). There would not be enough liquid for standard rice, and standard rice does not cook well in a slow cooker.

    I despise minute rice. It has zero redeeming value and is simply for those too lazy to use actual rice. You donโ€™t give any actual measurements either. This recipe is useless to me.

      The slow cooker doesn’t get hot enough, fast enough to cook standard rice. It turns out gummy and chalky.

    Three hours was even too long as one can of liquid is not enough and rice became sticky. Added in cheese and sour cream to make it more of a casserole consistency. Not sure Iโ€™ll make it again.

    Quick and easy recipe but Chicken was dry and bland even after seasoning the chicken. I used instant rice and it was so mushy. Only cooked for 3 hours. Will not make again.

    Delicious! I used instant jasmine rice and cut the chicken into 1โ€ cubes beforehand. Makes for easier service. We really enjoyed it. Cook time was only 3 hours. Will make it again.     Made 4 times in the last 4 months.
    2 weeks ago tried it with instant brown rice , cause never ate brown rice before lol.
    Both versions , thrilled with the results. Simple yet tasty.

    We had this for dinner tonight… fabulous! Took no time at all to throw together and the results were wonderful. Served with buttered peas and coleslaw. Lined the slow cooker with a liner made for it and clean-up was done and dusted in no time. Excellent!!
