This Slow Cooker Full Chicken Dinner has tender chicken thighs, Yukon gold potatoes and green beans in a savory herb sauce.
If you love making one pot meals in your slow cooker, also try creamy ranch chicken and potatoes.
I love it when I find a complete meal for the slow cooker — no worrying about making side dishes for this meal since everything is prepared at once.
For this meal, I use bone-in chicken thighs. I think if boneless skinless chicken is used in the recipe, the recipe will be dry.
The juices from the bone-in, skin-on chicken thighs help make a flavorful sauce along with the tomato sauce and seasonings. If you chose to use chicken breasts, add a cup of chicken broth.
How to make:
You will need these ingredients:
- Chicken thighs
- Cooking oil
- Yukon gold potatoes
- Fresh green beans
- Garlic
- Canned tomato sauce (not paste)
- Salt and pepper
- Dried thyme
- Dried Rosemary
How to make:
- Add the oil to a pan on the stove-top set to medium-high heat. Brown the chicken thighs on both sides.
- Add the potatoes and green beans to the slow cooker. Place the chicken on top.
- Add remaining ingredients on top of the chicken and smear around evenly over the chicken.
- Place the lid on and cook for 4.5 hours on high.
This full chicken dinner is a great Sunday meal, set this up after lunch and no worries about dinner at all, scoop and serve when the timer goes off.
Slow Cooker Full Chicken Dinner
Ingredients:
- 2 1/2 lbs bone-in chicken thighs
- 2 Tbsp. cooking oil
- 1 1/2 lbs. Yukon gold potatoes diced
- 1 lb. green beans ends snipped
- 2 garlic cloves minced
- 8 oz. can tomato sauce (not paste)
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. dried thyme
- 1/2 tsp. dried rosemary
Instructions:
- Set a pan on the stove top and set to medium-high heat. Add the cooking oil and swirl coat the bottom of the pan. When the oil is hot, brown the chicken on both sides, you don't need to cook the meat through.
- Add the diced potatoes and green beans to the bottom of the slow cooker, toss them together to combine them.
- Add the chicken thighs on top of the potatoes and green beans. Add the garlic. Drizzle over the tomato sauce, then sprinkle over the salt, pepper, thyme, and rosemary. Take a spatula and smear around the sauce trying to combine the seasoning into the sauce.
- Cover and cook on HIGH for 4.5 hours. Do no open the lid during the cooking time or the potatoes will not get tender.
- Serve and enjoy!

Can I put this in the oven? I forgot to pop it into my slow cooker this morning and I want this for dinner!!! Haha
Sarah Olson says
I think it will be fine, I don’t know how long though, sorry!
Ginnybug says
What could I use in place of the tomato sauce?
Sarah Olson says
I’m unsure, that’s what I based the recipe around. Are you not wanting tomatoes at all?
Ginnybug says
The recipe looks wonderful….. was just thinking about one person who doesn’t care for tomatoes. I am going to make it. T
hank you so much.
Bruce says
That would make it a different recipe, but maybe try cream of mushroom soup.
Ginnybug says
That is true but your suggestion also sounds good. Thanks.
Rob says
Woudn’t it make more sense to mix the tomato sauce and the seasonings before adding it to the cooker?
Sarah Olson says
You can do that! I don’t because I didn’t want to dirty a bowl. Everything bubbles together in the slow cooker anyway.
Nikki says
I’d need to double this recipe for my large family does anyone know how much cook time I should add?
Walter says
My wife just bought 10# of chicken leg quarters. Can’t resist a sale. Do you think I can sub these for the thighs?
Sarah Olson says
Yes, I’d cook it a half hour longer.:)
Lee says
I cooked this for a late lunch today and ignored the advice regarding using skinless breast fillets and it worked out great. Chicken was super juicy and tender. Great recipe though, it’s on the list now!
Sarah Olson says
That’s great to hear Lee! I’m glad it worked out.
Jodie says
Hello, just wondering how the chicken skin looks so brown. Is this a function of your special crockpot or will this turn out brown in any normal crockpot. Mine is pretty basic. Thanks for inspiring me to pull my slow cooker out I haven’t used it in ages as I have lacked the confidence.
It takes so long it would upset me to wait all that time for it to not work out, think that’s what I am scared of.
Thanks Jodie Melbourne Australia
Sarah Olson says
I browned them before I added them to the crock pot, and the tomato sauce adds a bit of color. 🙂
Ellen says
I work all day… What would you suggest me putting the timing on the crockpot on low ???? Thx in advance looks really yummy…
Candy says
I would imagine just double the time. I’m going to use 9 hours on low for mine since I’m working all day.
Ellen says
Thank you I am gonna try this….
Sarah Olson says
It may be fine on low for 8 hours. The chicken will be falling off the bone, but I think still tasty!
JANICE says
Can you use chicken breast instead of thighs?
Sarah Olson says
I’m unsure how that would turn out. You may need to add a touch more time and a touch more liquid. I don’t recommend skinless chicken for this recipe.
JANICE says
We don’t eat thighs is why I was asking. Thanks.
Lois says
Just wondering why you don’t eat the thighs? The dark meat is the most nutritious and flavorful so it’s often preferred. The white meat has less fat but also less flavor and is drier.
Judy says
A lot of people don’t eat dark meat.
Missy says
I Sympathize with Judy. I had a horrible experience at a chicken restaurant with bone in skin on chicken. let’s just say that the deep fryer didn’t cook very well and I cannot bring myself to eat bone in skin on chicken again it gets to my gag reflex is now.
Muriel Edger Magill says
I tried your onion potatoes in my crockpot… we loved the result! There is no doubt that I will do this one again. Thank you… Next on my list is the Chicken Thigh dinner…
Sarah Olson says
I’m so glad you liked it!

Bruce says
Hi Sarah, This looks like an awesome meal. Right now I’m a bachelor so this will meal will be great when I get in from fishing, and it’s all in one pot.
Thanks,
Bruce
