Why this Recipe is a Keeper
- I loved my mom's Chicken Broccoli Rice Casserole growing up (my absolute favorite childhood meal), and now I have a much easier slow cooker version.
- I took my famous Slow Cooker Chicken and Rice recipe and added broccoli. I don't think I will make it again without the broccoli!
- The chicken, broccoli, rice, and cheese make the best flavor combination! It tastes just as good when reheated.
The Ingredients

Chicken: Boneless, skinless chicken breasts are the best choice because they give this recipe the best texture.
Broccoli: I use fresh broccoli for this; add it at the end.
Rice: Cook long-grain white rice in a rice maker or on the stovetop. Don't use minute rice or precooked packages of rice, it won't have as great of flavor.
Sauce and Seasonings: To make up the other sauce ingredients, we use cream of chicken soup, sour cream, cheddar cheese, onion powder, garlic powder, and salt and pepper. Butter is added for more richness.
How to Make Slow Cooker Chicken, Broccoli, and Rice

- Add the chicken and seasonings to the crockpot.

- Spread over the cream of chicken soup and add the butter pats.

- Cook until the chicken is tender and shred.

- Add the fresh broccoli and replace the lid. Let cook for 45 minutes.

- When the broccoli is done cooking, add the cooked rice and sour cream. Add half the cheese and stir.

- Sprinkle over the cheese. Cook a little longer, until the cheese melts.

Can I Cook the Rice in the Slow Cooker?
No, cooking the rice separately will give it a better texture. Trust me, I've tested this recipe many ways, and cooking it on the side is best.
Can I Use Frozen Broccoli?
Yes, and it will about take the same amount of time as fresh because it will thaw quickly and has been blanched. Check for your preferred tenderness before adding the rice

Variations
Brown Rice: Cook it separately, then stir it in at the end.
Cheese Swap: Try Swiss cheese or provolone for a different flavor.
Bacon: Stir in cooked, crumbled bacon at the end or sprinkle it over the cheese.
Add Veggies: Add onions, mushrooms, or carrots at the beginning of the cooking time, or add peas just before serving.

What to Serve with Slow Cooker Chicken, Broccoli and Rice?
Plate Up: This truly is a complete meal! All you need to do is spoon the chicken, broccoli, and rice casserole into bowls or plates.
Toppings: You can add toppings such as more cheese, hot sauce or a dollop of sour cream.
How to Store
This casserole will last about 3 days in the fridge, or you can freeze for up to three months. This is one meal my mom would always freeze for us and still tastes great months later.
