Why this Recipe is a Keeper

    • I loved my mom's Chicken Broccoli Rice Casserole growing up (my absolute favorite childhood meal), and now I have a much easier slow cooker version.
    • I took my famous Slow Cooker Chicken and Rice recipe and added broccoli. I don't think I will make it again without the broccoli!
    • The chicken, broccoli, rice, and cheese make the best flavor combination! It tastes just as good when reheated.

    The Ingredients

Ingredients for chicken broccoli and rice on a table.

Chicken: Boneless, skinless chicken breasts are the best choice because they give this recipe the best texture.

Broccoli: I use fresh broccoli for this; add it at the end.

Rice: Cook long-grain white rice in a rice maker or on the stovetop. Don't use minute rice or precooked packages of rice, it won't have as great of flavor.

Sauce and Seasonings: To make up the other sauce ingredients, we use cream of chicken soup, sour cream, cheddar cheese, onion powder, garlic powder, and salt and pepper. Butter is added for more richness.

Can I Cook the Rice in the Slow Cooker?

No, cooking the rice separately will give it a better texture. Trust me, I've tested this recipe many ways, and cooking it on the side is best.

    Can I Use Frozen Broccoli?

Yes, and it will about take the same amount of time as fresh because it will thaw quickly and has been blanched. Check for your preferred tenderness before adding the rice

    Variations

Brown Rice: Cook it separately, then stir it in at the end.

Cheese Swap: Try Swiss cheese or provolone for a different flavor.

Bacon: Stir in cooked, crumbled bacon at the end or sprinkle it over the cheese.

Add Veggies: Add onions, mushrooms, or carrots at the beginning of the cooking time, or add peas just before serving.

What to Serve with Slow Cooker Chicken, Broccoli and Rice?

Plate Up: This truly is a complete meal! All you need to do is spoon the chicken, broccoli, and rice casserole into bowls or plates.

Toppings: You can add toppings such as more cheese, hot sauce or a dollop of sour cream.

    How to Store

This casserole will last about 3 days in the fridge, or you can freeze for up to three months. This is one meal my mom would always freeze for us and still tastes great months later.

    • 4 Tbsp. salted butter

    WAIT TO ADD

    • 3-4 cups cut broccoli (smallish bite sized pieces), 1 large head
    • 8 oz. sharp cheddar cheese, shredded and divided
    • ½ cup sour cream
    • 2 cups uncooked long-grain white rice, cooked separately according to package directions, this is about 6 cups cooked rice

    For Serving

    • sliced green onion

    Instructions

    • Place the chicken in the slow cooker and add seasonings.
    • Add the cans of cream of chicken soup and butter pats.
    • Place the lid on the slow cooker and cook on LOW for 6 hours.
    • Shred the chicken with two forks right in the slow cooker. Now add the broccoli and cook for 45 more minutes on HIGH.
    • While the dish is finishing cooking, cook your rice on the stove top or in a rice maker.
    • Check the broccoli for doneness, and cook longer if needed. Add the cooked hot rice, HALF of the cheese, and the sour cream to the chicken and sauce.
    • Stir everything together, and sprinkle over the remaining cheese. Replace the lid until the cheese melts; this will only take about 5 minutes.
    • For serving add black pepper and green onions if desired.

    Sarah's Notes

Frozen broccoli works well in this recipe; the cooking time remains the same.
It’s very important to use freshly cooked long-grain rice. Trust me, if you want an outstanding meal, don’t use precooked packaged rice or Minute rice, and don’t cook the rice in the slow cooker.
