I’ve been eagerly awaiting for it to get closer to Thanksgiving to share this recipe. I’m sharing a recipe I created for Hurst’s Hambeen’s, I’m using their Cajun 15 Bean Soup mix for this recipe.
Often after Thanksgiving, I make soup the next day with the leftover turkey. My go-to is always turkey noodle and that can get boring. I love how this soup mix changes the leftover turkey into an entirely different meal, something with spice and lots of flavors.
Hurst’s Hambeens Cajun 15 Bean Soup Mix is widely available in the dried bean section of the store. You can look up where to find the bean mix closest to you.
These dried beans cook up very well in the slow cooker without presoaking. I cooked these beans for 7 hours on high.
It may seem like a long time, but it’s the right amount of time for the beans to tenderize. I love how the split peas dissolve in the soup, but many of the other beans keep their shape.
The packaging on the Cajun 15 Bean Mix suggests not adding anything acidic until the end of the cooking time, doing this ensures the beans will tenderize. I add crushed tomatoes and lemon juice right before serving.

Slow Cooker Cajun 15 Bean Soup with Turkey
Ingredients
- 20 oz. Hurst’ HamBeensⓇ Cajun 15 Bean SoupⓇ mix, (save Cajun flavor packet for the end of cooking time)
- 3 cups leftover cooked turkey or chicken
- 2 carrots, diced
- 1 small yellow onion, diced
- 2 celery ribs, diced
- 1 poblano pepper, seeds removed and diced
- 1 red bell pepper, diced
- 1 tsp. oregano
- 1/4 tsp. black pepper
- 1/2 tsp. liquid hickory smoke
- 8 cups water
Add these ingredients at the end:
- 28 oz. can crushed tomatoes
- 1/2 lemon, juiced
- salt to taste
Instructions
- Rinse and sort through the dry beans, sort out any debris and discard. Add the rinsed beans to the slow cooker.
- Add the cooked turkey, onion, celery, poblano pepper, bell pepper, oregano, pepper, liquid smoke, and water. Pour over the water and stir. (Wait to add the tomatoes and lemon juice).
- Cover and cook on HIGH for 7 hours without opening the lid during the cooking time. Add the crushed tomatoes, lemon juice and the Cajun seasoning packet, stir. Add salt if desired.
- Serve and enjoy!

I had everything but Cajun seasoning so I made my own. Excellent soup. I like hearty soups and stoops. This is the time of the year I like to try new recipes. The cast-iron pot or crockpot gets a lot of use from now till spring and even then I find myself making some.
I enjoyed this one very much. As far as freezing, you can pretty much freeze anything but this one is easily frozen. No problem!

Absolutely Delicious! Didn’t see Cajun 15 bean soup turkey recipe but I did cook Cajun 15 beans soup with turkey with some tweaks. I used 1 lb. ground turkey crumbled, 1 hot turkey Italian sausage link, 2 turkey andouille sausages, medium yucca thickly sliced, 3 medium red potatoes, 2 large red onions, 5 garlic cloves, 2 Goya chicken bouillon pkgs., 1 Habanero pepper diced, handful cilantro, sea salt to taste.
I wanted a hearty healthy yet spicy soup. The yucca and potatoes thickened soup to a stew consistency. Habanero pepper and spice pack added just the right amount of spiciness when added while beans were cooking. Used enough spring water to cover potatoes and yucca.
I didn’t use tomatoes and forgot to add the lime juice but was delicious to my taste buds. Also, I used the quick method cooked on high heat till time to add sautรฉed ingredients. Thanks for sharing recipe!
This sounds really good, but is it real spicy? My stomach doesn’t like as much spice as it used to, lol. Might try it even if I only use 1/2 of the spice pk. Thanks

Can I freeze this if we have any leftovers?
I don’t see why not!
You can freeze just about anything. I freeze individual portions.
You can freeze with freezer bags you can freeze if youโve got, or you can do it with your meal. Minder bags are usually freeze 2 cups serve bags and write what it is in it. Sometimes I write a gallon if itโs one meal but I use the seal to seal the bags.
