- 1/2 lb. fresh green beans, trimmed (about 2.5 cups)
- 1 1/4 lb. diced red potatoes, about 4 cups
Homemade dressing ingredients:
- 1/3 cup FRESH lemon juice (NOT BOTTLED), (1 large or 2 small lemons)
- 1/4 cup olive oil
- 1 tsp. dried oregano
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. onion powder
- 2 garlic cloves, minced
Instructions
- Start by placing the chicken the middle of the slow cooker. Next, add the green beans on one side. Then for the potatoes, you will need to mound them high off to the other side.
- In a medium-sized bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder, and garlic cloves.
- Pour this mixture evenly over the chicken, green beans and potatoes.
- Cover and cook on HIGH for 4 hours or LOW for 7 hours, without opening the lid during the cooking time.
- Note- Do NOT use lemon juice out of squeeze bottle, the recipe will not turn out correct.

Hello, I want to make this recipe, however I have Italian dressing mix packets, if I use them,what would be used for the liquid?
I would use one packet a half cup of water and 1/4 cup melted butter or olive oil.
Can I use frozen green beans instead of fresh? AND if so, when do I add them theyโre not over OR under cooked?
I would add them the last 2 hours if you don’t like them over cooked.
I had high hopes for this after reading the reviews but this was just ok. My chicken was dry and my potatoes were a bit bland. I will try this again with chicken thighs and will cut my potatoes smaller to see if they absorb more flavor. All in all it was still a decent and VERY easy meal after a night of kids sports. Sometimes thatโs all you ask for!

I tried it tonight and it was delicious. I addition onion soup mix and more seasonings. I also added chicken stock to the bottom of the crockpot. I used frozen green beans. Definitely putting this in rotation.
This is a very filling meal but I found it to be quite bland. Definitely needed more spices and salt.
