How to Make Chicken, Potatoes and Green Beans
Step One: Make the homemade dressing by mixing the olive oil, lemon juice and seasonings.



Step Two: Add the chicken to the center of the slow cooker, add the cut green beans on one side, then the cut potatoes on the other side.
Step Three: Pour over the homemade dressing over the chicken, potatoes and green beans.

- 2 lbs. Boneless Skinless Chicken Breasts
- 1/2 lb. fresh green beans, trimmed (about 2.5 cups)
- 1 1/4 lb. diced red potatoes, about 4 cups
Homemade dressing ingredients:
- 1/3 cup FRESH lemon juice (NOT BOTTLED), (1 large or 2 small lemons)
- 1/4 cup olive oil
- 1 tsp. dried oregano
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. onion powder
- 2 garlic cloves, minced
Instructions
- Start by placing the chicken the middle of the slow cooker. Next, add the green beans on one side. Then for the potatoes, you will need to mound them high off to the other side.
- In a medium-sized bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder, and garlic cloves.
- Pour this mixture evenly over the chicken, green beans and potatoes.
- Cover and cook on HIGH for 4 hours or LOW for 7 hours, without opening the lid during the cooking time.
- Note- Do NOT use lemon juice out of squeeze bottle, the recipe will not turn out correct.

Made this recipe used riced cauliflower instead of potatoes frozen green beans. My husband who doesn’t like chicken said it was the best chicken he has tasted. He requested I make it again today so I am. I did you real lemon juice and Italian seasoning herbs. With the garlic and olive oil and salt and pepper and minced dried onion. It was excellent.

Prepared this meal with Yukon potatoes, 10 oz. frozen string green beans and Italian dressing and melted butter. It was sooooo tender and good. Chicken breasts shredded with fork. I sprayed crock with Pam to avoid chicken sticking to crock. Highly recommend this recipe.

How much Italian dressing did you use?
I agree with Carol. The chix breast eas stringy and a tough. If I make this again I would use chix thighs. The potaies and green beans were good.
This is one of my family’s favorite recipes, we tweak it a bit, that could help you. I use baby carrots instead of green beans, I double the liquid/spices part of the recipe and do a layer of the sauce over the chicken, and then more over the carrots/potatoes. I cook for about 8 hours. Also I add little broccoli pieces in the last 2 hours. I shred the chicken at the end, mix everything together. It turns out amazing. Real lemons too!
Oops I forgot, I also add lime juice.
I used bottled Italian dressing. It is delicious.
Can I prep this, put in in the freezer, for a crockpot dump?
Potatoes don’t do well in the freezer, you can probably do the chicken, sauce and green beans though.

I would cut them. The potaotes take the longest to cook.
