How to Make Chicken, Potatoes and Green Beans
Step One: Make the homemade dressing by mixing the olive oil, lemon juice and seasonings.



Step Two: Add the chicken to the center of the slow cooker, add the cut green beans on one side, then the cut potatoes on the other side.
Step Three: Pour over the homemade dressing over the chicken, potatoes and green beans.

Ingredients
- 2 lbs. Boneless Skinless Chicken Breasts
- 1/2 lb. fresh green beans, trimmed (about 2.5 cups)
- 1 1/4 lb. diced red potatoes, about 4 cups
Homemade dressing ingredients:
- 1/3 cup FRESH lemon juice (NOT BOTTLED), (1 large or 2 small lemons)
- 1/4 cup olive oil
- 1 tsp. dried oregano
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. onion powder
- 2 garlic cloves, minced
Instructions
- Start by placing the chicken the middle of the slow cooker. Next, add the green beans on one side. Then for the potatoes, you will need to mound them high off to the other side.
- In a medium-sized bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder, and garlic cloves.
- Pour this mixture evenly over the chicken, green beans and potatoes.
- Cover and cook on HIGH for 4 hours or LOW for 7 hours, without opening the lid during the cooking time.
- Note- Do NOT use lemon juice out of squeeze bottle, the recipe will not turn out correct.

I made this awhile ago and the family loved it. Reading your recipe notes and read about using Italian dressing mix. So tonight I will try the dressing mix. I’m sure it will be just as good. Oh, I also tried the chicken potatoes and carrots with the garlic seasoned. That was yummy.

Thank you for letting me know about stacking the ingredients in a 3 quart slow cooker. Is it OK to put a chicken breast on top of the other two, and will the cooking time still be the same on high if I put the chicken breasts on top of each other?

As a busy wife, I was excited to have an entire meal made easy. But when I plated everything & my husband took the first bite, I was so embarrassed. It was extremely bland (even after DOUBLING the spices). I followed everything exactly so I’m not sure what went wrong. The only difference was I used frozen chicken, but as one commenter stated, you simply need to add 1 more hour to the cook time (8 hrs total).
We literally threw out the food it was so horrible. Do NOT make this unless you like “boiled chicken with a spritz of lemon & semi hard potatoes”- as my husband stated so well. Very very disappointed.
Frozen chicken has a water around it, making dishes taste watery. If your potatoes were hard, you need to cook longer.
Can you freeze for later and add to slow cooker
Potatoes don’t freeze well, they get grainy after being frozen. The rest should be fine though.
Can you use bottled dressing
Yes, that bottled Italian dressing will work great!
This will come out delicious whether you use bottled lemon juice or fresh lemon juice. I used bottled and almost doubled (about 1 1/2) the homemade dressing mix and this was so good. I used frozen green beans and russet potatoes. I would recommend using fresh green beans as mine came out a little too soft for my liking. I also sprinkled the chicken with salt on both sides before putting into the crockpot.
