  • 4 lbs. boneless pork loin
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 32 oz. sauerkraut with juice
  • 2 Tbsp. apple cider vinegar
  • 1 yellow onion, sliced
  • 1 red apple (such as Fuji or Red Delicious) , peeled, cored, and chopped

Instructions 

  • Place the pork loin fat side up into the slow cooker.
  • Season the pork with the 1 teaspoon of salt and ½ teaspoon of black pepper.
  • Add the sauerkraut, including its juice, over and around the pork.
  • Pour the apple cider vinegar evenly over the sauerkraut and pork.
  • Top with the sliced onion and chopped apple, spreading them evenly.
  • Cover the slow cooker with the lid and cook on low for 8 hours or high for 4 hours, or until the pork is tender and easily shreds with a fork.
  • Once cooked, shred the pork directly in the slow cooker and stir the sauerkraut mixture to combine the flavors.
