Instructions
Place the pork loin fat side up into the slow cooker.
Season the pork with the 1 teaspoon of salt and ½ teaspoon of black pepper.
Add the sauerkraut, including its juice, over and around the pork.
Pour the apple cider vinegar evenly over the sauerkraut and pork.
Top with the sliced onion and chopped apple, spreading them evenly.
Cover the slow cooker with the lid and cook on low for 8 hours or high for 4 hours, or until the pork is tender and easily shreds with a fork.
Once cooked, shred the pork directly in the slow cooker and stir the sauerkraut mixture to combine the flavors.

For a sweeter flavor, add 1-2 tablespoons of brown sugar to the sauerkraut mixture before cooking.If you prefer a tangier dish, increase the apple cider vinegar to 1/4 cup.Slow cooker temperatures vary - you may need to cook longer to achieve a tender roast.
