    The Ingredients

Ingredients for marry me chicken soup on a table.

Chicken: Grab a pack of boneless, skinless chicken breasts. No need to brown them first.

Sun-Dried Tomatoes: These are my favorite part of Marry Me Chicken recipes! They have a slightly sweet flavor and usually come packed in oil with garlic. So good!

Pasta: My favorite pasta shape for this soup is ditalini. It's just the right size for soup.

Other Flavors: Chicken stock, cream, and spinach round out the soup, while red pepper flakes, garlic powder, basil, salt, and pepper add plenty of flavor.

    Tips & Variations

Pasta Shape: You can use another pasta shape, but I recommend keeping it small. Mini bow ties, small shells, or elbow macaroni work well.

Tomato Swap: You can use a can of petite diced tomatoes instead of sun-dried tomatoes; if so, add a touch more garlic and salt.

Parmesan Rind: If you have a parmesan rind, add it to the soup at the beginning of cooking; it adds so much flavor!

More Vegetables: Add carrots, celery, leeks, or mushrooms for a heartier soup.

How to Serve Marry Me Chicken Soup

Toppings: This Italian-style soup is great topped with Parmesan cheese, freshly ground pepper, and crushed saltine crackers.

Sides: Serve with garlic bread or breadsticks for dipping. A simple green salad is another great option.

Can Pasta be Cooked in a Slow Cooker?

For best results, cook your pasta on the stovetop before adding it to the slow cooker. The slow cooker doesn't get hot enough to cook pasta properly.

    How to Store and Reheat

Place the leftovers in airtight containers and place in the fridge for up to four days, or freeze for up to six months. Reheat in the microwave or on the stovetop.

    How to Video

    Ingredients

    • 1 medium yellow onion, diced
    • 1 lb. boneless, skinless chicken breasts
    • ½ tsp. salt
    • ¼ tsp. black pepper
    • 1 tsp. dried basil
    • 1 tsp. garlic powder
    • ¼ tsp. red pepper flakes
    • ½ cup sun-dried tomatoes, chopped
    • 4 cups chicken stock or broth

    WAIT TO ADD

    • 8 ounces ditalini pasta, (cooked on stove-top, see directions below)
    • 1 cup heavy cream
    • 1/2 cup grated parmesan cheese
    • 3 cups fresh baby spinach

    Instructions

    • Place the diced yellow onion in the bottom of the slow cooker, then lay the chicken breasts evenly on top of the onions.
    • Season the chicken with the salt, black pepper, dried basil, garlic powder, and red pepper flakes.
    • Add the chopped sun-dried tomatoes to the pot and pour the chicken stock over all the ingredients.
    • Cover the slow cooker with the lid and cook on low for 6 hours or on high for 4 hours until the chicken is completely tender.
    • Remove the chicken breasts from the slow cooker, place them on a cutting board, and use two forks to shred the meat into bite-sized pieces, then return the shredded chicken to the pot.
    • Cook the ditalini pasta in salted boiling water according to the package directions until al dente. Drain and set aside.
    • Stir in the heavy cream, parmesan cheese, and baby spinach. Cover and cook for 5–10 minutes, or until the spinach wilts and the cheese melts.
    • Stir the cooked ditalini pasta directly into the soup just before serving, or portion the pasta into individual bowls and ladle the hot soup over it. Enjoy!

    Sarah's Notes

Find the sun-dried tomatoes in a jar in oil. I find them near the artichoke hearts and roasted red peppers.
Any small shape of pasta can be used.
Don't be tempted to add the pasta uncooked to the slow cooker, it will have a strange chalky texture.
After the cooking time is up, turn off the slow cooker so the pasta doesn't get soggy.
Don't like spinach? Simply leave it out.
