I’m not sure who first came up with the idea of cooking with pickles, but honestly, it’s genius. If you’ve ever tried a Mississippi pot roast, you know how the vinegar from the peppers makes the dish flavorful.

When you cook with dill pickles, you get that same tangy kick from the vinegar, plus the fresh, herby flavor of dill. It takes things to a whole new level! You’ve got to give my Dill Pickle Pot Roast a try, or even my Dill Pickle Soup—you won’t regret it!

Dill Pickle Chicken Ingredients

These are simple ingredients and simple to make. Find the full recipe in the recipe car below the images.

Ingredients for slow cooker dill pickle chicken on a table.
  • Chicken Breasts: Boneless skinless chicken breasts, though chicken thighs can be used instead.
  • Dill Pickles: A 16-ounce jar of pickles and all the juices (or brine). For this recipe you definitely want to use dill pickles, not sweet or bread and butter pickles.
  • Other Additions: Chicken gravy, ranch seasoning, whole garlic cloves, and dill weed seasoning.

Variations

Here are my favorite ways to change up this recipe:

  • You can swap out sliced pickles for baby dill pickles if you prefer.
  • For a creamy twist, toss in a block of cream cheese to make it “Creamy Dill Pickle Chicken.”
  • If you want to turn up the heat, simply dice 1-2 jalapeños and sprinkle them over the chicken for a spicy kick! Or if you can find spicy pickles, that works great too.

How to make Dill Pickle Chicken

See how I make this chicken in the crockpot:

  1. Add the chicken to the slow cooker and sprinkle over the ranch seasoning mix and gravy mix.
  2. Add the pickles and their juices, dill weed, and garlic cloves.
  1. Place the lid on the slow cooker and cook on low for 5-6 hours.
  2. When the cooking time is up shred the chicken with two forks right in the slow cooker.

Serving Suggestions

You won’t believe how many ways you can change up serving this chicken!

  • A popular way to serve Dill Pickle Chicken is on toasted hamburger buns, making it a delicious and easy sandwich. For toppings, consider adding mayonnaise (or ranch dressing), cheddar cheese slices, and thinly sliced red onion for extra flavor. Another option is to serve the chicken on homemade biscuits for a comforting twist.
  • For a heartier meal, serve the Dill Pickle Chicken over creamy mashed potatoes or steamed rice. My slow cooker mashed potatoes would make a perfect pairing.

Sarah’s Notes

Storing Tips: Place the leftover dill chicken in ziplock bags or airtight containers. This will last about 4 days in the fridge or 3 months in the freezer.
What does this taste like? This dill pickle chicken tastes like shredded chicken that has a hint of dill pickle flavor, the gravy packet and ranch seasoning help mellow out the harsh pickle flavor.

It is far too salty using both envelopes of seasoning, plus the sodium in the pickle hjuice. The flavor is good but unless I can figure out a make around to reduce the sodium I wont make it again. Maybe leave out the chicken gravy packet?

Thank you for the review! Iโ€™m wondering if you could replace the pickle juice with water or omit it all together? McCormick makes a 30% less sodium chicken gravy mix that you could try. Maybe adding cream cheese (see variations) would cut the saltiness?

Hello! Im looking forward to making this recipe! Have already tried your dill pickle pot roast and it was great! For anyone looking to reduce sodium, I have had success with using reduced sodium gravy and making my own ranch seasoning. Spend with pennies has a good recipe for homemade ranch. I used all the herbs/spices but omitted the buttermilk and salt. I replaced the store bought ranch with two tablespoons of the homemade when i made the pickle pot roast. It turned out wonderful, not too salty. Hope this helps anyone looking to cut sodium intake!
