Chipotle chicken bowls offer a lighter alternative to heavier Mexican dishes that can be way too heavy for regular eating. I created this dish that is primarily protein-rich, but I’ve ensured it has plenty of seasoning and a great spicy flavor. You can customize this dish with your favorite toppings.

This recipe comes together with just a handful of ingredients like chicken, black beans, and corn, all cooked in chipotle salsa for a flavorful finish. Chipotle salsa brings a signature smoky heat, and most grocery stores carry several options in their salsa aisle.

How to Make Chipotle Chicken Bowls

This dump-and-go crockpot recipe can be made in two simple steps!

Step One: Place the chicken breasts in the slow cooker. Sprinkle over the taco seasoning, then add the drained corn and rinsed black beans. Pour the chipotle salsa over everything.

Step Two: You can choose to cook this on high or low. Shred the chicken with two forks and stir everything together. Serve with your favorite toppings like cheese, avocado, sour cream, and onion.

Ways to Serve

These bowls are lower in carbs and pair perfectly with simple toppings like avocado, cheese, diced onion, and sour cream. For extra flavor, try adding fresh cilantro or a splash of hot sauce.

Want to stretch the recipe even further? Serve the filling over steamed white rice to make it even more hearty.

You can also switch things up by using the mixture as a filling for flour tortillas or warmed corn taco shells.

Cook’s Notes

Can’t find chipotle salsa but love the smoky flavor? Find canned chipotle peppers in adobo sauce. Add one chopped chipotle pepper and one tablespoon of the adobo sauce (along with a regular salsa).

Any salsa can be used if you don’t like the smoky chipotle peppers.

Make creamy chicken bowls by adding a block of cream cheese at the beginning of the cooking time.

These Chipotle Chicken Bowls are made with tender slow-cooked chicken, beans, corn, and smoky chipotle salsa, then finished with your favorite toppings.

How to Video

Ingredients 
 

  • 2 lbs. Boneless Skinless Chicken Breasts
  • 1.25 oz. taco seasoning
  • 15 oz. fire-roasted corn, drained
  • 16 oz. chipotle salsa, (Find this on the salsa aisle, and you will find a few choices. I use Casa Martinez)
  • 15 oz. can black beans, drained and rinsed

Serving suggestions

  • shredded cheese
  • avocado
  • sour cream

Instructions 

  • Place the chicken breasts in the bottom of the slow cooker and sprinkle with taco seasoning. Add the drained corn and rinsed black beans, then pour the chipotle salsa over the top to cover everything.
  • Cover and cook on LOW for 6–7 hours or HIGH for 4 hours, until the chicken is tender.
  • Shred the chicken with two forks right in the slow cooker and stir everything together.
  • Serve in bowls with your favorite toppings like avocado, cheese, sour cream, and onion—or spoon into taco shells or over rice.

Make the leftovers different! Make nachos, burritos or quesadillas the next day to change things up.
Leftovers are even better the next day. This recipe freezes and thaws well. Freeze for up to three months.
