Rich and indulgent Worcestershire Pot Roast is a treat of a meal. Tender roast gets cooked with butter, pearl onions, and Worcestershire sauce, a flavor combination you didn’t know you needed.

If you’ve been following my recipes for a while, you know my secret ingredient for many beef recipes is Worcestershire sauce. This sauce tastes rich and beefy, even though it contains no beef! It has a magic touch and I’m excited to share this recipe that uses this ingredient as the main star.

Chuck Roast – A well-marbled chuck roast will do best in this recipe.

Worcestershire Sauce – It’s a tangy, savory condiment made from vinegar, molasses, anchovies, and spices.

Vegetables – Gold potatoes, carrots, and pearl onions will round out this meal for you.

Other Sauce Ingredients – Salt, pepper, au jus gravy packet, butter, and thyme will combine with the Worcestershire sauce and tastes like fancy demi-glaze from a restaurant.

How to Make Worcestershire Pot Roast

  1. Sear the roast until browned, then place it in the slow cooker over a bed of vegetables.
  2. Add Worcestershire sauce, garlic, seasonings, and top the roast with butter and fresh thyme.
  3. Let it cook low and slow until the beef is fall-apart tender and the vegetables are perfectly soft.

Tips & Variations

Sauce Swap: You can use soy sauce instead of Worcestershire sauce if needed. It will give a salty tang the recipe needs.

Other Vegetables: You can add celery or mushrooms to make this roast dinner even heartier.

Roast Change: You can substitute a bottom round (rump roast), but add a cup of water or beef broth.

How to Serve Worcestershire Pot Roast

This is a complete meal! I add dinner rolls with butter and serve! Such an easy way to end a stressful day. You can add additional sides, such as Slow Cooker Creamed Corn or Slow Cooker Brussels Sprouts.

How Can the Gravy be Thickened?

For a thicker gravy, transfer the liquid to a saucepan, whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water), and simmer until thickened.

Ingredients  

  • 2 Tbsp. olive oil
  • 3-4 lbs. beef chuck roast
  • 1 1/2 tsp. salt
  • 1 tsp. freshly ground black pepper
  • 1 oz. packet au jus mix
  • ¼ cup Worcestershire sauce
  • 6 cloves garlic, chopped
  • 12 oz. bag frozen pearl onions
  • 1 cup baby carrots
  • 1 lb. baby yellow potatoes
  • ½ cup unsalted butter
  • 4-5 sprigs fresh thyme

Instructions 

  • Add olive oil in a large skillet over medium-high heat. Pat the chuck roast with paper towels to remove any moisture, then lightly coat it with salt and pepper on all sides. Sear the roast in the skillet for about 3-4 minutes per side, until it develops a deep brown crust.
  • Arrange the pearl onions, baby carrots, and potatoes evenly across the bottom of the slow cooker.
  • Transfer the browned roast to the slow cooker, placing it on top of the vegetables.
  • Sprinkle the au jus mix over the roast, and drizzle the Worcestershire sauce over the top.
  • Add the chopped garlic around the roast and vegetables.
  • Place the stick of unsalted butter directly on top of the roast, and lay the thyme sprigs over the butter and vegetables.
  • Put the lid on the slow cooker and set it to low for 8-10 hours or high for 5-6 hours. Cook until the roast is tender and easily falls apart when pulled with a fork.
  • Discard the thyme sprigs before serving. Shred the roast and serve it alongside the vegetables, spooning the gravy over the top. Enjoy!
