- 1 small white onion, chopped
- 1 green bell pepper, diced
- 14.5 oz. can diced tomatoes, undrained

- 1 1/2 cups vegetable stock
- 1/2 fresh squeezed lime

Instructions
- Dice sweet potatoes, onions, and bell pepper.
- Place all ingredients into crockpot and stir well.
