How to Make Chicken, Potatoes and Green Beans

Step One: Make the homemade dressing by mixing the olive oil, lemon juice and seasonings.

Step Two: Add the chicken to the center of the slow cooker, add the cut green beans on one side, then the cut potatoes on the other side.

Step Three: Pour over the homemade dressing over the chicken, potatoes and green beans.

Variations

This recipe has been tested many times as is. If you want to make some changes, here are great ideas.

  • Use a different vegetable than green beans. You can use: Broccoli, asparagus, canned or fresh corn, baby carrots, or use extra potatoes!
  • Use Italian dressing instead of the homemade (such as Newman’s own).
  • Or use a stick of melted butter and sprinkle a packet of Good Seasons Italian dressing mix over. You can find the Italian dressing mix on the salad dressing aisle next to the ranch dressing packets.

Ingredients 
 

  • 2 lbs. Boneless Skinless Chicken Breasts
  • 1/2 lb. fresh green beans, trimmed (about 2.5 cups)
  • 1 1/4 lb. diced red potatoes, about 4 cups

Homemade dressing ingredients:

  • 1/3 cup FRESH lemon juice (NOT BOTTLED), (1 large or 2 small lemons)
  • 1/4 cup olive oil
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. onion powder
  • 2 garlic cloves, minced

Instructions 

  • Start by placing the chicken the middle of the slow cooker. Next, add the green beans on one side. Then for the potatoes, you will need to mound them high off to the other side.
  • In a medium-sized bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder, and garlic cloves.
  • Pour this mixture evenly over the chicken, green beans and potatoes.
  • Cover and cook on HIGH for 4 hours or LOW for 7 hours, without opening the lid during the cooking time.
  • Note- Do NOT use lemon juice out of squeeze bottle, the recipe will not turn out correct.

Sarah’s Notes

Why can’t I use bottled lemon juice?
Bottled lemon juice in recipes can taste bitter. This recipe has been tested with fresh lemon juice. Many reviews who have used bottled instead have not liked the meal for the flavor of the bottled lemon juice isn’t right for this recipe.
How to Store:
Place in airtight containers and refrigerate for up to three days. I do not recommend freezing this for potatoes don’t reheat well after being froze.

    I made this for dinner tonight and I followed the recipe to a T . Everything cooked well the potatoes in particular were cooked perfectly. However it was so sour from the lemon juice that my family and I couldn’t eat it and it ended up going to the dogs.

    Ok, the sarcastic comment about changing the recipe cracked me up.. but for real, I have twin toddlers and store trips are no fun sometimes and I have everything to make this except instead of lemons, I have limes. Any guesses on if it will turnout ok?

    Not a fan. Sounded good – picture looked good- but just a weird taste. Disappointed.

    I used frozen breaded chicken nuggets instead of chicken breasts, frozen french fried potatoes instead of fresh red potatoes, some shredded lettuce I had sitting in the refrigerator for a couple of weeks instead of green beans, bottled orange juice instead of fresh lemon juice, some used motor oil I had on hand instead of olive oil, I used Mrs. Dash instead of oregano because I felt like it, I left out the salt cuz I didn’t have any, I put in 1/16 of a teaspoon of pepper instead of 1/4 teaspoon because I don’t like pepper, I increased the amount of onion powder to half a cup instead of 1/4 teaspoon because I LOVE onion powder, and instead of mincing the garlic cloves I mashed them with my feet.

    I did not like this recipe AT ALL and I can’t figure out why not! It sounded so good!

        This comment was meant to convey my dislike of the fact that so many people claim to be reviewing a recipe but then go on to discuss all of the changes they made to it. It’s ubiquitous, but nevertheless it’s a pet peeve of mine.

        I need to give up on sarcasm on the internet. No matter how obvious I believe it is that it IS sarcasm, (I mean, come on, used motor oil , one half cup of onion powder, mashing garlic cloves with my feet, and changing every single ingredient isn’t obvious? ), and no matter that I actually denote that it is sarcasm, somebody out there will take it seriously.

      It’s best to thaw meat, some studies suggest it isn’t safe to cook frozen meat in the slow cooker.
