We love a good slow cooker dessert, they just hit different. They’re warm, decadent, and this turtle cake may be semi-homemade but tastes completely from scratch. With my simple recipe you will be in chocolate heaven in no time.

Coffee: Enhances the chocolate taste (can substitute water if preferred).

Eggs & Oil: Essential mix-ins to bring the batter together.

Salted Caramel: Poured over the cooled cake for a gooey topping.

Whole Pecans: Added on top for crunch and that classic turtle candy finish.

How to Make Turtle Cake in the Slow Cooker

  1. Make the chocolate cake batter.
  2. Slow cook until set, then let it cool.
  3. Pour on caramel, crown with pecans, slice and serve.

Different Cake Mix: You can use devil’s food cake or even a yellow cake mix.

Caramel Swap: You can use non salted caramel or even butter scotch. There are plenty of choices on the ice cream topping section of the store.

Hot Spots: If your slow cooker tends to heat more on one side, simply take out your insert and rotate it halfway through the cooking time.

How to Serve this Cake

Serve Warm: You can serve warm right out of the slow cooker, though you will have to scoop it.

Serve Cold: This cake is just as good served cold or at room temperature. It tastes like a sticky toffee cake when cold.

Toppings: This turtle cake is good on it’s own, but also great topped with vanilla ice cream or whipped cream.

Can this cake be doubled?

No, the edges will burn before it can set in the middle. If you want to double this, simply use two slow cookers instead.

Ingredients  

  • 13.25 oz. Chocolate Fudge Cake Mix, (I use Betty Crocker)
  • 1 cup coffee , (I use this instead of water)
  • 1/2 cup vegetable or canola oil
  • 2 large eggs

For Topping

  • 1 cup salted caramel , (I find this in the ice cream topping aisle)
  • 1 1/2 cups whole pecans, You will need enough pecans to cover the cake.

Instructions 

  • Spray the slow cooker heavily with non-stick spray.
  • In a large bowl add the cake mix, coffee, eggs and oil. Mix until smooth (some lumps left are fine; this is normal).
  • Pour the cake mix into the slow cooker.
  • Cook on HIGH for 2 hours (or until set in the middle) this will vary depending on your slow cooker.
  • When the cooking time is done, remove the slow cooker from the insert and let cool for at least an hour – adding the caramel too soon will make it completely disappear into the cake.
  • When cool, add the caramel and arrange the pecans on top.
  • Serve and enjoy!

Sarah’s Notes

Optional: Before adding the pecans to the cake you can toast them in a dry skillet, this will give them more flavor and freshen them up if they are stale.
